Beef and Pepper Kabobs Recipe: How to Make It image

I've traveled to many different countries and am always on the lookout for cookbooks. I adapted this recipe from a Turkish cookbook and it brings rave reviews whenever I serve it. I usually serve the kabobs with rice pilaf and a tossed salad.

Yield 6-8 servings.

Number Of Ingredients 8

3 tablespoons lemon juice
2 tablespoons canola oil
1 large onion, finely chopped
1-1/2 teaspoons dried thyme
1/2 teaspoon salt
1/4 teaspoon pepper
2 pounds beef top sirloin steak, cut into 1-inch cubes
1 each medium sweet green, yellow, orange and red peppers

Steps:

  • In a large heavy-duty resealable plastic bag, combine the lemon juice, oil, onion, thyme, salt and pepper. Add meat; seal bag and turn to coat. Refrigerate for 6 hours or overnight. , Cut peppers into 1-in. squares and thread onto metal or soaked wooden skewers alternately with meat. , Grill over medium heat for 12-15 minutes or until the meat reaches desired doneness, turning often.

This is a wonderful kabob for grilling. With more types of mushrooms available in the grocery store, you can now make these year-round using an assortment of button, portabello, shiitake, and crimini mushrooms.

¾ cup sliced fresh mushrooms
2 red bell peppers, chopped
1 green bell pepper, cut into 1 inch pieces
¼ cup olive oil
2 tablespoons lemon juice
1 clove garlic, minced
2 teaspoons chopped fresh thyme
1 teaspoon chopped fresh rosemary
¼ teaspoon salt
¼ teaspoon ground black pepper

Steps:

  • Preheat grill for medium heat.
  • Thread mushrooms and peppers alternately on skewers.
  • In a small bowl, mix together olive oil, lemon juice, garlic, thyme, rosemary, and salt and pepper. Brush mushrooms and peppers with this flavored oil.
  • Brush grate with oil, and place kabobs on the grill. Baste frequently with oil mixture. Cook for about 4 to 6 minutes, or until mushrooms are tender and thoroughly cooked.
