BAKED WHITING RECIPE | ALLRECIPES
A healthy way to enjoy whiting and/or tilapia, without spending all of your time in the kitchen. My family enjoys it, even the kids will be looking forward to the next time I make fish.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Place whiting fillets in a baking dish and add enough milk to cover the entire bottom of the dish. Season fillets with garlic powder, onion powder, paprika, and salt. Top each fillet with at least 3 pieces tomato. Add butter to each fillet. Squeeze 1 lemon half over each fillet.
- Bake in the preheated oven until fish flakes easily with a fork, 30 to 45 minutes.

We seldom eat fried foods in our home anymore, but every now and then we crave us some fried whiting! Umm delicious with some Louisanna hot sauce! Hope you enjoy!

- If possible, buy your whiting fresh from the seafood market and have them fillet the fish. I wash the whiting quickly in vinegar, than rinse with cold water and pat dry. Place whiting in a flat container and sprinkle with pepper and a little salt. Set aside in fridge while you make the breading.
- In a large mixing bowl, combine the corn meal, flour, black pepper, cayenne pepper, salt and garlic powder.
- Heat a large skillet with oil on the stove. Make sure the oil is at high temp but not smoking.
- Take the whiting fillets and dredge them in the flour one at a time and shake off excess. Place the whiting in the skillet. Cook each side until golden brown (about 5 minutes each side). Fish will "float" when done. Drain on paper towel.
- You can also throw in some scallops or shrimp(pictured with the fish) following the same directions for the whiting. Enjoy delicious fried whiting!

1. You will need to cook the fish in two batches, so warm the oven and have a plate ready for the fish. Take a large frying pan and check that all four fillets will fit at once. Put the pan over high heat, pour in enough clarified butter to cover the base of the pan and heat it to hot. Meanwhile, dip the fish fillets in milk, then in the flour and sprinkle with sea salt. When hot enough, add the fillets to the pan, skin side down, and cook for about one minute. Turn over and cook for a further minute. Transfer to a warm oven and repeat with the remaining fillets.
2. Mix together the herbs, shallots and spring onions. Just before serving, dress with extra virgin olive oil, lemon juice and seasoning.
3. When you are about to plate the fish, add the cubed butter to the pan over a high heat. Place two fillets on each serving plate, squeeze a little lemon juice over, sprinkle with parsley and some sea salt and add a good grind of pepper. When the butter in the pan turns nut brown, spoon it over the fish – the butter, parsley and lemon juice will mingle to create a delicious sauce. Serve immediately with the small herb salad on the side.
TIP
For thicker fillets, skip the milk and flour crust and place the fillets skin-side down in the pan. Push the fish down with another frying pan and cook the skin for about three minutes then remove the pan, turn the fillet briefly to seal the underside and allow the fish to rest. It will be perfectly cooked with a crisp skin crust.
