2?½ pounds assorted chicken pieces, skinned
1 teaspoon paprika
½ teaspoon ground pepper
¼ teaspoon salt
Vegetable cooking spray
1?½ teaspoons vegetable oil
1?½ cups long-grain rice, uncooked
1 teaspoon minced garlic (about 2 cloves)
1 (16-ounce) can no-salt-added chicken broth
1 (14 1/2-ounce) can pasta-style chunky tomatoes, undrained
1 green pepper, seeded and cut into thin strips
1?½ cups frozen English peas

Steps:

  • Sprinkle chicken with paprika, pepper, and salt. Coat an oven-proof Dutch oven with cooking spray. Add oil, and place over medium-high heat until hot. Add chicken to Dutch oven; cook on all sides until browned. Remove chicken from Dutch oven, and set aside.
  • Add rice and garlic to Dutch oven. Cook over medium-high heat, stirring constantly, 1 minute. Add broth, tomatoes, and green pepper. Bring mixture to a boil over high heat, stirring once. Return chicken to Dutch oven.
  • Cover and bake at 350° for 40 minutes. Stir in peas; cover and let stand 5 minutes.

1 tablespoon olive oil
2 celery ribs, sliced
1 medium onion, chopped
1 medium green pepper, chopped
1 package (14 ounces) smoked turkey sausage, sliced
1 carton (32 ounces) reduced-sodium chicken broth
1 can (16 ounces) kidney beans, rinsed and drained
1-1/4 cups uncooked converted rice
1/3 cup tomato paste
1 bay leaf
1-1/2 teaspoons Cajun seasoning
1/4 teaspoon cayenne pepper
Hot pepper sauce, optional

Steps:

  • In a Dutch oven, heat oil over medium-high heat. Add celery, onion and green pepper; cook and stir until crisp-tender, 3-4 minutes. Add sausage; cook until browned, 2-3 minutes., Stir in broth, beans, rice, tomato paste, bay leaf, Cajun seasoning and cayenne pepper. Bring to a boil; reduce heat. Simmer, uncovered, until rice is tender and liquid is absorbed, 15-20 minutes, stirring occasionally. Discard bay leaf. If desired, serve with pepper sauce.

This is another absolutely delicious and easy recipe for the dutch oven. We got the recipe out of the Lodge "Camp Dutch Oven Cooking 101"-from Backyard to Backwoods.
