Pork Neck Bones with Gravy : Taste of Southern image

Follow our easy, step-by-step, photo illustrated recipe to make this old Southern Pork Neck Bones with Gravy recipe. It's called "soul-food" for a reason, it'll warm up your insides. We'll show you how to prepare the neck bones, cook them, then make a big old pan of gravy to go along with it.

Number Of Ingredients 5

2-3 lbs. Fresh Pork Neck Bones
1 Onion, medium size, diced
1 teaspoon Red Pepper Flakes
2 teaspoons Salt
½ teaspoon Black Pepper

Steps:

  • Wash the neck bones under cold running water.
  • Trim away any gristle, small bones, or fat that you can see.
  • Place washed neck bones in a large size sauce pot.
  • Add red pepper flakes.
  • Add salt
  • Add black pepper.
  • Add diced onions.
  • Cover with about 2 inches of water.
  • Place pot over medium-high heat on your stove top.
  • Bring to a boil, and let boil about 15 minutes. Skim off any foam if it forms, discard.
  • Reduce heat to medium simmer.
  • Cover the pot, let cook until meat is tender. About 1 to 1½ hours.
  • Neck bones are done when meat reaches the fall off the bone stage.
  • Remove the cooked neck bones from liquid, cover, set aside.
  • Measure out 1 cup of liquid to make gravy, if desired.

As a kid growing up in Rural Arkansas, my mom often made this, fullfilling & hearty soup to feed all 13 of us. She used vegetables from our garden,& used Pork neck Bones, because that was one of the cheapest meats you could buy at the time. She made a huge 15 inch cast Iron skillet of Corn Bread to go with it,& added liquids to cover the meat, & it made a huge pot. Had lots of flavor, & was so very tasty. This is my spin on her recipe. Neckbones were on sale & were quite meaty, so I decided to make a soup like Mama's.On a cold Illinois winters day, it taste good is warm & comforting.

Number Of Ingredients 19

9 pound(s) meaty pork neckbones
1 pound(s) baby carrots, cut in half
2 pound(s) mixed vegetables
1 small red onion chopped
1 bunch(es) green onions chopped
1 medium yellow onion chopped
3-4 stick(s) celery, chopped
6-8 medium potatoes, peeled, washed & quartered
2 can(s) (18 oz) progresso recipe starters cooking sauce(fire roasted tomatoes)
2 can(s) diced tomatoes ( 15 1/2 oz. each)
2 tablespoon(s) minces garlic, or less if preferred
2-3 - bay leaves
24 ounce(s) v-8 low sodium tomato juice
2 teaspoon(s) dried thyme
1 1/2 teaspoon(s) coarse black pepper
2 teaspoon(s) kosher salt (after tasting broth) if desired
SPICE BLEND FOR MEATS
1 tablespoon(s) each, paprika,garlic powder,onion powder,coarse black pepper, kosher salt,dried parsley, cumin
2 teaspoon(s) dried thyme

Steps:

  • This recipe make a lot, you can use the amounts suited for your family, and what ever vegetables you prefer, or have on hand. You call the shots. Just make sure that you have enough water to cover the meat as it cooks. You will need a pot large enough to accomadate all of your meat & veggies with the liquid.
  • Chop veggies needed for the soup, carrots cut in half, chop green, red & white onions & celery.
  • Peel wash & quarter potatoes
  • Combine spices for seasoning meat, & generously season meat with spices. Will probably have some left over for another use.
  • Add meat to large pot, cover with water and bring to a low boil, and simmer for about 1 1/2 to 2 hours. Skim off any foam that surfaces to the top of pot.
  • Add Recipe starter & tomato juice. Continue to cook.
  • Add chopped vegetables, potatoes, garlic, bay leaves and other spices, and continue to simmer. Cook on low and taste, add additional seasoning if needed. Cook until meat & vegetables are very tender.
  • Serve with favorite Bread & butter if desired.

  • NOTES: I use the biggest pot I own (I think it's about 5qt) for this recipe. The chicken alone needs to get covered with the water to begin with and after that, the dumplings add some height to it. So my large pot is big enough for it all, thankfully. You can use a whole chicken (like I do, since that's what I grew up seeing and doing) or you can use boneless pieces like the breasts, legs, thighs, or whatever parts you want. If you don't use a whole chicken, I'd suggest using the skinless pieces since it's easier to just rip apart and throw in the part without having to deal with skinning it as well. I don't normally put any vegetables in it besides the onion, but when I do, I normally throw in carrots (shredded, julienne, or chopped) and celery for some added nutrients. It's completely up to you though! You can probably added corn, green beans, broccoli, etc in it if you really wanted to. Thanks for all the comments!
