[Roasted Green Eggplant] Cooking without oil consumption is to marinate the eggplant beforehand. The meat sauce aroma is good for serving!

500 g Eggplant (green peel)
200 g pork
Right amount Sliced ginger
Right amount salt
Right amount Garlic slices
2 tbsp Soy sauce
Half bowl Starch water
a little oil

Steps:

  • Soak the eggplants in water in advance and wash them well.
  • The washed green eggplant is cut into hob pieces and salted.
  • Prepare pork slices, ginger and garlic slices, light soy sauce and dark soy sauce.
  • Pour the brine from the marinated eggplant and rinse with water.
  • Heat a hot pot with a little oil, and stir fragrant pork on low heat.
  • Stir fragrant ginger and garlic slices with pork.
  • Pour in the marinated green eggplant and stir fry.
  • Add pork, pour in the sauce and stir fry evenly.
  • Depending on the degree of dryness or wetness of the stir-frying, add a little water to cover the pot and continue to boil.
  • The starch water is ready to collect the juice.

Spoon sauce and repeat the layering 2 more times to make 3 layers. End with the remaining mozzarella. Carefully press the layers down firmly into the dish once assembled. Place the dish in the top part of the oven and cook until the cheese is melted and bubbly, 35 to 40 minutes. For extra browning, put the dish under the broiler for a minute or two just before serving to get an extra brown cheesy top. I always nibble on a bit of that before sharing it with my friends!
