Baked Smoked Paprika Corvina Fish | Just A Pinch Recipes image

I love Grouper Fish but is about $26.00 a pound. I have found a substitute Corvina which is cheaper but a good value for my money. The Corvina, also known as the Corvina drum (Cilus gilberti), is a saltwater fish of the Sciaenidae family (commonly called croakers or drums). It inhabits mostly tropical to temperate coastal waters of the southeastern Pacific along Central and South America. The Corvina is highly prized in South America as a food fish. Enjoy my video.

Number Of Ingredients 8

1 - 8" filets corvina fish ( cut into 4 3 oz. filets)
FROM THE PANTRY
2 tablespoon(s) olive oil, extra virgin
1 tablespoon(s) tablespoon smoked paprika http://www.spicesinc.com
1/2 teaspoon(s) himalania pink salt or regular salte
1/2 teaspoon(s) ground black pepper
1 teaspoon(s) old bay seasoning
4 teaspoon(s) litehouse salad herb blend http://www.litehousefoods.com/products/instantly-fresh-herbs

Steps:

  • In a large bowl combine all ingredients from the pantry list. Blend well, then add Corvina filets to the mixture and coat well. Cover with plastic wrap and set in refrigerator for one hour.
  • Prep your baking pan and preheat oven @ 400 degrees.
  • Place fish on baking pan about ½” apart and bake for about 15 or until golden browned.

Who doesn't love a fish fry? Corvina is a nice white, meaty fish, similar to sea bass, that holds up well when frying. The combination of Louisiana fish fry batter, Panko bread crumbs and Parmesan cheese gives it a nice flavor and crunch.

Number Of Ingredients 8

1 large fillet of Corvina, cut in 5-6 even pieces
about ½ cup Louisiana Fish Fry prepared breading mix
about ½ cup Panko bread crumbs, unseasoned
? - ½ cup Parmesan cheese, grated
beat 1 egg plus 1 Tablespoon of water to make an egg wash
kosher salt & black pepper to taste (prefer Diamond kosher salt)
Canola oil for frying
optional: finish with sea salt, black pepper and lemon wedges

Steps:

  • Pat the fillets dry with a paper towel and season the Corvina with kosher salt and pepper.
