Number Of Ingredients 8

2 eggs
1/2 cup flour
1/2 teaspoon salt
1/4 teaspoon pepper
2 1/2 cups fresh bread crumbs, made by cutting the crusts off white bread and swirling the bread in a food processor or blender
1 large chicken breast, split, boned and skinned, and cut into strips (or 4 fillets of fish)
3 tablespoons butter
1 lemon, cut into wedges

Steps:

  • Crack the eggs into a bowl and lightly beat with a fork. Put the flour in another bowl, and add the salt and pepper. In the third bowl, put the bread crumbs.
  • Dip a piece of chicken in the flour, covering both sides. Gently shake off any excess. Dip the floured chicken in the egg and let the extra drip off. Then lay it in the bread crumbs, and scoop some over to cover the top. Press down gently all over, then lift from the bowl and set on a plate. Do that for all the chicken.
  • Melt the butter in a large pan over medium heat, and when the white foam floats to the top, use a spoon to skim it off. Then put in the chicken and cook for about 7 minutes on each side, or until the crumbs are nicely browned. (Fish will take less time.) Use a spatula to turn the chicken over, and cook 5 more minutes or so. Serve with lemon wedges.

Chicken breasts are most likely America's favorite part of the chicken. When I was a kid, it was the only part of the chicken that I would eat. Luckily, it was just a passing phase that I got over. For this article, I have rekindled my love for the chicken breast, and there is no better way to cook a chicken breast than to fry it. Maybe it's not the healthiest option, but as long as you don't eat fried stuff everyday, you should be okay. Everything in moderation, right?

    1. Tear the bread into a food processor. Peel and add the garlic, then blitz into fairly fine crumbs.
    2. Place the chicken breasts between 2 large sheets of greaseproof paper, then wash your hands.
    3. Whack the chicken breasts with a rolling pin or the base of a large non-stick frying pan to flatten them to about 1cm thick. That’s the fun bit!
    4. Now lift up the chicken, pour half the breadcrumbs onto the paper, put the chicken back and scatter the rest on top. Roughly pat them on, then re-cover with the paper and wash your hands.
    5. Whack the chicken again, to hammer the crumbs into it and help them stick.
    6. Put the pan you used to bash the chicken on a medium heat. Once hot, pour in 1 tablespoon of oil, then fry the crumbed chicken for 3 minutes on each side, or until crisp, golden and cooked through.
    7. Remove the cooked chicken to a board, and squeeze over a little lemon juice. Use the thyme as a brush to spread the honey evenly over the chicken (or drizzle over), then slice the chicken 1cm thick. I like to serve it with a colourful chopped salad.

GET AHEAD You can do this on the day, if you prefer. Pour 325ml of tepid water into a large bowl. Add the yeast and mix with a fork for 2 minutes. Pour in the flour and a good pinch of sea salt, then use a fork to mix until you can’t move it any more. Now, get your clean hands in there and bring it together as a ball of dough, adding more flour, if needed, to stop your hands and the dough sticking. Knead on a flour-dusted surface for 5 minutes, or until silky and elastic. Knock the air out of the dough by punching it with your fist, then divide into two. One piece at a time, pull and stretch out on an oiled surface to 30cm x 50cm. Spread over half the cream cheese mixture, leaving a 5cm border along the longer side that’s farthest away from you. Now, take your time to roll up the dough, starting in front of you, so you end up with a long Swiss roll shape. With a sharp knife, cut the roll into 18 pieces, then place in the tray, swirl-side up, arranging them fairly close together. Cover and prove in the fridge overnight (45 minutes, or until doubled in size, if making on the day). TO SERVE Preheat the oven to 220°C/425°F/gas 7. Uncover and bake on the top shelf for 20 minutes, or until golden. Drizzle with a little extra virgin olive oil, to serve.
