Crispy-Skinned Boudin Recipe - Taste of Place image

Much like dirty rice, cajun boudin sausage is made with ground pork, rice, and spices. Chef Link serves his crispy boudin with pickled okra and good-quality whole-grain mustard.

  • Preheat oven to 275 to 300 degrees F. Lightly oil a sheet pan and place the links on the sheet pan. Bake slowly for 25 to 30 minutes until the boudin is golden brown on the outside. Serve boudin on a platter with your favorite pickled okra and good whole grain mustard.

Café Degas French Boudin noir with pinot noir Bordelaise and green apple Tarte Tatin. To avoid a bloody mess in your kitchen, we have omitted making the boudin from scratch.
