My Son used to make this for us when he was at home. I couldnt remember how to do it so of course I came right to JAP! I found Marcia McCance's recipe and decided to put my own twist on it. I have finally made my "own" copy of it because it is so very different than hers. Tonight, since it is spring and I didnt have any frozen peas I substituted asparagus! DELICIOUS. Because I forgot to take pictures...these pictures are when I HAD peas! Dont be afraid to play with a recipe and make it your own...you just might come up with something better!

Number Of Ingredients 14

1 medium onion, chopped
3 clove(s) garlic, sliced
3 tablespoon(s) olive oil, extra virgin
1 tablespoon(s) butter
5 large mushrooms, sliced
8 slice(s) bacon, chopped in small pieces
1/2 cup(s) white wine or sherry
1 pound(s) spaghetti or other long pasta
1/2 bag(s) peas, frozen
4 - eggs
to taste - salt and pepper
1 can(s) tomatoes, italian style
3/4 cup(s) parmesan cheese, sprinkle before eating
- fresh basil, parsley, greeen onion and cilantro

Steps:

  • Chop onion into small pieces and brown in olive oil and butter. Add mushrooms and sliced garlic.
  • Cut bacon into very small pieces, mix with the wine and onion and cook over slow heat for about 20 minutes. If it becomes too dry add either more Sherry or water.
  • In the meantime cook spaghetti in the usual way. Add frozen peas when you put the pasta in the water. (NOTE: I used Gluten free brown rice pasta and cooked it 8 minutes.)
  • While the above items are cooking, break eggs into a large bowl add salt and pepper and beat well. Add juice from tomatoes too. Put the tomatoes and fresh chopped herbs into the bowl you will serve in. You can reserve additional herbs for garnish if desired/
  • When the spaghetti is ready, drain and put into the bowl with the tomatoes. Pour in egg mixture. Mix well because the heat of the spaghetti is going to cook the eggs.
  • Over this, pour the bacon mixture, and mix again. Serve with Parmesan over the top.

0.25 cup(s) Basil fresh, chopped (plus extra leaves for garnish)
9 oz Shredded part-skim mozzarella cheese divided
32 oz Bottled spaghetti sauce
2 oz Pepperoni finely julienned (about 1/2 cup)

Steps:

  • Preheat oven to 400ºF. Coat a 9- X 13-inch glass baking dish with cooking spray; set aside.
  • Break spaghetti into 2-inch pieces and cook, al dente, according to directions; drain and cool.
  • Meanwhile, in a large bowl, beat egg whites and egg until frothy. Stir in milk, garlic powder, salt, oregano, basil and 1/3 of mozzarella; add cooked spaghetti and stir until thoroughly combined. Spread spaghetti mixture evenly in bottom of baking dish. Bake for 15 minutes; remove from oven. Reduce oven temperature to 350ºF.
  • Spread spaghetti sauce over pasta; sprinkle with remaining cheese. Scatter pepperoni evenly over cheese layer. Return to oven and bake until heated through and cheese is bubbly, about 30 minutes. Let stand for 5 minutes, garnish with basil and then cut into 10 servings. Yields 1 slice per serving.
