boneless skinless chicken breasts

4 c.

low-sodium chicken broth (or water)

Kosher salt 

Freshly ground black pepper

Steps:

  • In a large pot over medium-high heat, add chicken. Pour broth over chicken to cover and season generously with salt and pepper.  Bring to a boil, then cover and reduce heat to medium. Let simmer until chicken is cooked through, 10 minutes. Remove from pan and let rest 10 minutes.  Shred chicken with two forks and use as desired.

1 1/2 pound(s) chicken tenders
2 1/2 cup(s) chicken or vegitable stock
1 sprig(s) rosemary sprigs
1 sprig(s) thyme, leaves
1 sprig(s) tarragon
1 - bay leaf
pinch(es) salt and pepper

Steps:

  • Place 10” – 12” non-stick skillet over high heat.
  • Add to skillet, chicken stock, rosemary, thyme, tarragon, and bay leaf. Cover and bring to boil.
  • Season chicken with salt and pepper to liking then add chicken tenders to skillet but do not over crowd (you can always do a second batch if needed) and cover and then reduce heat to low.
  • Set timer for 15 minutes, turn tenders over, then set for another 15 minutes.
  • Remove all tenders to cool and discard liquid and herbs.
