1?¼ pounds ground turkey
2 eggs, divided
1?¼ cups whole wheat bread crumbs, divided
3 scallions, finely chopped
3 tablespoons finely chopped parsley
½ teaspoon garlic powder
½ teaspoon salt
½ teaspoon freshly ground black pepper
2 dashes hot sauce
¼ cup all-purpose flour, or as needed

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Coat a baking sheet with cooking spray.
  • Combine turkey, 1 egg, 1/4 cup bread crumbs, scallions, parsley, garlic powder, salt, and black pepper in a bowl. Form mixture into 6 patties using a 1/3-cup measuring cup.
  • Beat remaining egg and hot sauce together in a bowl. Pour remaining bread crumbs into a bowl. Pour flour into a separate bowl.
  • Coat patties with flour, egg mixture, and bread crumbs, in that order, and place on the prepared baking sheet. Lightly spray patties with cooking spray.
  • Bake in the preheated oven until crisp, 18 to 20 minutes.

large egg, beaten

low-sodium soy sauce

small shallot, minced

green onions, thinly sliced

cloves garlic, minced

1 tsp.

ground mustard

Kosher salt

Freshly ground black pepper

Pinch crushed red pepper flakes

Hamburger buns

Spicy mayonnaise

Butterhead lettuce

Red onion, thinly sliced

Avocado, sliced

Steps:

  • Preheat oven to 350° and line a baking sheet with parchment paper. In a large bowl, combine ground turkey and remaining ingredients. Season with salt, pepper, and pinch of red pepper flakes and mix until just combined. Form into 4 patties about 3” wide and place on prepared baking sheet. Mixture may be wet and it’s helpful to wet your hands to form into a patty. Once on the baking sheet, you can flatten the patty more.  Bake for 15 minutes until cooked through and internal temperature reaches 165°.  Serve on buns with desired toppings.

Alternatively cook on the grill: Preheat your grill over medium-high heat, 400 to 425°. Oil the grill grates. Place the patties on the grill over direct heat. Cook for 4 to 5 minutes per side, covered, or until the internal temperature reads 165°. If you like cheese on your burgers, add during the last minute of cooking, then cover to melt. Serve immediately on toasted buns with whatever toppings you like!
