ONE POUND PIZZA DOUGH ABM (OR 1 1/2 POUNDS) RECIPE - FOOD.COM

One Pound Pizza Dough Abm (Or 1 1/2 Pounds) Recipe - Food.com image

This is based on a recipe from BH&G's Bread Machine Bounty. It's delicious and simple and makes a one pound (or 1 1/2 pounds in parens) pizza dough. Cook time does not include bread machine dough cycle. You may optionally freeze the dough, or half the dough, for later use. To freeze: wrap in plastic wrap and transfer to a freezer bag; seal, label, and freeze for up to 3 months; to thaw, let dough stand at room temperature about 2 1/2 hours or till thawed; you may also thaw overnight in the refrigerator. UPDATE: after reading the first reviewer's comments about the cooking method, I have to confess that while I use this recipe for the dough itself, I've never followed these cooking instructions, nor have I tried to freeze the dough; I've included those instructions because they came with the recipe and I wanted to be thorough in adding this recipe to Zaar. I'm intrigued enough to want to try both cooking methods and freezing the dough and will report back! :)

Total Time 30 minutes

Prep Time 5 minutes

Cook Time 25 minutes

Yield 1-2 pizzas

Number Of Ingredients 6

2/3 cup water (1 cup)
4 teaspoons cooking oil (2 tablespoons)
2 cups bread flour (3 cups)
1/2 teaspoon salt (3/4 teaspoon)
1 teaspoon active dry yeast (1 1/2 pound uses same measure)
cornmeal (optional)

Steps:

  • Add the first 5 ingredients to bread machine in the order recommended by its manufacturer. Select dough setting.
  • When cycle is complete, remove dough from machine; if making the 1 1/2 pounder, divide it in half.
  • TO MAKE A THIN PIZZA:.
  • Grease a 12-inch pan or large baking sheet. Optionally sprinkle with cornmeal.
  • On a lightly floured surface, roll the dough (for a 1 pounder) or each dough half (for the 1 1/2 pounder) into a 13-inch circle. Transfer to pan or baking sheet. Do not let dough rise.
  • Bake in a 425°F oven about 12 minutes or till browned.
  • Top with pizza sauce and toppings of your choice.
  • Bake 10 to 15 minutes more or till bubbly.
  • TO MAKE A PAN PIZZA:.
  • Grease a 9x9x2-inch baking pan (or 2 pans if your making both halves of the 1 1/2 pounder); optionally sprinkle with cornmeal.
  • Roll out the 1 pound dough or each half of the 1 1/2 pounder to fit the bottom of the pan(s), and to reach halfway up the sides of prepared pan(s).
  • Cover and let rise in a warm place till nearly double (30 to 45 minutes).
  • Bake in a 375°F oven for 20 to 25 minutes or till lightly browned.
  • Top with pizza sauce and toppings of your choice.
  • Bake 15 to 20 minutes more or till bubbly.

BASIC WHITE BREAD 1 1/2 LB LOAF RECIPE - FOOD.COM

BASIC WHITE BREAD 1 1/2 LB LOAF Recipe - Food.com image

Great small loaf of light airy white bread. Great for sandwiches, toast, etc. Let your bread machine do the hard work but bake in a bread pan in your oven for a better looking loaf. I use a 4 1/2" x 8 1/2" pan because I like it to rise high above the pan but you can use a 5" x 9" pan if you prefer a loaf that isn't as tall. For a great bun recipe try my "Hamburger Buns, Hotdog Buns, or Dinner Rolls" http://www.food.com/recipe/hamburger-buns-hotdog-buns-or-dinner-rolls-532275 recipe also on this site.

Total Time 3 hours 5 minutes

Prep Time 2 hours 30 minutes

Cook Time 35 minutes

Yield 1 1 1/2 lb loaf

Number Of Ingredients 7

1 cup warm water (236.59g, 110 degrees F/45degrees C)
2 tablespoons white sugar
1 (1/4 ounce) package bread machine yeast (2 1/4 teaspoons instant yeast)
4 tablespoons vegetable oil
3 cups white bread flour (384g)
1 teaspoon salt
3 tablespoons butter, melted

Steps:

  • 1. Place the water into the bread machine pan.
  • 2. Add sugar and oil to water and stir to dissolve sugar. Add yeast to the water and stir to dissolve.
  • 3. Allow the yeast to foam for 10 minutes.
  • 4. Mix together flour and salt and add to bread machine pan.
  • 5. Select the dough cycle and press start and allow to complete full cycle including first rise.
  • 6. Always check your dough mid way through the kneading cycle and adjust with either water or flour for proper consistency. The dough will sometimes have to be adjusted due to humidity, temperature, and variations in flour.
  • 7. Spray an 8 ½” x 4 ½” bread pan with cooking spray.
  • When dough cycle is complete transfer dough to lightly floured surface and gently deflate.
  • Knead 6 or 8 times, turning 90 degrees each time.
  • Shape the dough into an 8" log.
  • Place the log in a lightly greased 8 1/2" x 4 1/2" loaf pan, cover the pan loosely with parchment paper or lightly greased plastic wrap, and allow the bread to rise for 45 to 60 minutes or until ripe. Dough is ready to bake when your index finger pressed into the dough up to first joint leaves a mark that rebounds slowly. It will rise pretty high using a 4 1/2" x 8 1/2" pan. Towards the end of the rise, preheat your oven to 350°F.
  • Brush with half the melted butter. Bake the bread for 30 to 35 minutes, until it's light golden brown. Test it for doneness by removing it from the pan and thumping it on the bottom (it should sound hollow), or by measuring its interior temperature with a digital thermometer (it should register 190°F at the center of the loaf).
  • Remove the bread from the oven. Brush with remaining melted butter. Remove from pan and cool it on a rack before slicing. Store the bread in a plastic bag at room temperature for several days; freeze for longer storage.

  • Weigh your cabbage to see how much salt you should use.Remove the outer leaves of your cabbage and any that are damaged. Discard. Cut out the core and rinse the cabbage well, allowing the water to flow between the cabbage leaves. Drain well.Reserve 1 outer leaf. Thinly shred the remaining cabbage with a knife or food processor. Place in a large bowl. Sprinkle the calculated amount of salt over the cabbage and toss well. Let sit for 15 minutes. Massage the cabbage with your hands for 5 minutes. The cabbage should release a good amount of liquid during this time.Pack the cabbage firmly into a very clean glass quart jar. Pour the liquid that was released during kneading on top. Cut a circle the same diameter as your jar out of the reserved cabbage leaf. Place it on top of the packed-down cabbage. Place a weight on top of the cabbage to ensure that it stays under the brine. If the brine doesn't completely cover the cabbage and weight, top off with a 2% solution of salt water (1 teaspoon salt per cup of water).Screw a plastic lid onto the jar. Place the jar in a rimmed pan (to catch any overflow) and allow to ferment at room temperature until the kraut is as sour as you like it. This can take anywhere from 1–4 weeks. After it's done fermenting, store the sauerkraut in the refrigerator.

ONE POUND PIZZA DOUGH | JUST A PINCH RECIPES
This recipe comes from the USA WEEKEND Magazine, found in our Indianapolis News, Sunday edition. When I made this, I did not roll the dough out on a floured surface. I pressed it out onto my sheet pan, with my fingers. The dough was nice and crispy on the edges, but the bottom was not crispy, although the overall crust had a nice chew. I'm still experimenting with this crust. If I come up with a different bottom texture, I will let y'all know, what I did different. Until then, ENJOY!
