Number Of Ingredients 11

6 small sweet potatoes (about 2 3/4 lb.)
4 large navel oranges
1 (14-oz.) can sweetened condensed milk
3 tablespoons melted butter
2 teaspoons vanilla extract
2 teaspoons orange zest
¼ teaspoon salt
? teaspoon ground nutmeg
? teaspoon ground allspice
? teaspoon ground cinnamon
1 cup miniature marshmallows

Steps:

  • Preheat oven to 425º. Place sweet potatoes on an aluminum foil-lined baking sheet. Bake at 425° for 45 minutes or until tender. Let stand 20 minutes. Reduce oven temperature to 350º.
  • Meanwhile, cut oranges in half crosswise. Scoop out pulp using a spoon, leaving peel intact. Reserve orange pulp for another use.
  • Peel sweet potatoes, and place potato pulp in a large bowl. Add sweetened condensed milk and next 7 ingredients. Beat at medium speed with an electric mixer until smooth, stopping occasionally to remove any tough fibers, if necessary. Spoon about 1/2 cup mixture into each orange cup. Place orange cups in a 13- x 9-inch baking dish.
  • Bake at 350° for 20 minutes. Remove from oven, and top with marshmallows, pressing lightly to adhere. Bake 15 to 20 minutes or until marshmallows are melted and golden brown.
  • Note: Orange cups and sweet potatoes can be made 1 day ahead. Chill scooped orange cups and baked sweet potatoes in separate zip-top plastic bags until ready to assemble.
  • Pecan-Ginger-Sweet Potato Cups: Prepare recipe as directed through Step 3, adding 3/4 tsp. ground ginger with sweetened condensed milk. Bake cups at 350° for 20 minutes. Top with 1/2 cup chopped pecans; top with marshmallows as directed. Proceed with recipe as directed.

Crust
1 cup all-purpose flour
1/8 teaspoon salt
1/3 cup cold Land O Lakes® Butter cut into chunks
3 to 4 tablespoons cold water
Filling
1 1/4 cups firmly packed brown sugar
4 medium (1 1/2 cups) sweet potatoes, * cooked, skins removed, mashed
3/4 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
1/4 teaspoon ground nutmeg
1 cup evaporated milk
3 large Land O Lakes® Eggs
Topping
Land O Lakes® Heavy Whipping Cream sweetened, whipped, if desired
Decorator sugar, if desired

Steps:

  • Heat oven to 350°F.
  • Combine flour and 1/8 teaspoon salt in bowl; cut in butter with pastry blender or fork until mixture resembles coarse crumbs. Stir in enough water with fork just until flour is moistened. Shape into ball; flatten slightly.
  • Roll out ball of dough on lightly floured surface into 12-inch circle. Fold into quarters. Place dough into 9-inch pie pan; unfold, pressing firmly against bottom and sides. Trim crust to 1/2 inch from edge of pan. Crimp or flute edge. Set aside.
  • Combine all filling ingredients except evaporated milk and eggs in bowl. Beat at medium speed, scraping bowl often, until well mixed. Add milk and eggs; beat at low speed until well mixed.
  • Pour filling into crust. Bake 50-60 minutes or until knife inserted in center comes out clean. If crust is browning too quickly, cover edge with 2-inch strip of aluminum foil. Cool completely. Garnish with whipped cream, if desired. Sprinkle with decorator sugar, if desired. Store refrigerated.
