Pouring hot marinade over tofu slices encourages faster absorption of flavors, eliminating the need to marinate overnight. In a pinch, this method yields tasty results in three hours, but the recommended six hours deliver a much more complex, richer flavored tofu. Grilled, it makes a versatile side dish and is delicious warm or at room temperature. Pair it with steamed rice and a simple green salad, or turn the tofu into satisfying vegetarian sandwiches by tucking it into pita bread with lettuce and avocado.

1 (14-ounce) block extra-firm tofu, sliced crosswise into eight equal slices (about 1/2-inch thick)
2 tablespoons safflower or canola oil, plus more for greasing grates
2 tablespoons minced garlic
1 tablespoon minced fresh ginger
1/3 cup low-sodium soy sauce
2 tablespoons turbinado sugar
1/2 teaspoon black pepper
2 tablespoons chopped scallions

Steps:

  • Arrange sliced tofu in a single layer on a paper towel-lined plate. Press top with more paper towels to remove excess water. Arrange tofu in a 9-by-13-inch baking dish, or any shallow dish that can hold the tofu in one layer.
  • In a small saucepan, combine oil, garlic and ginger over medium; bring to a simmer. Cook, stirring frequently, until softened and fragrant, 2 minutes. Add soy sauce, sugar, pepper and 1/4 cup water, and cook, stirring to dissolve the sugar, about 2 minutes.
  • Pour hot marinade over tofu. Gently turn tofu slices to evenly coat, then cover dish tightly with plastic wrap to seal in heat. Refrigerate for 6 hours (or up to 8 hours), flipping tofu slices halfway through.
  • Heat grill to medium and grease grates well (or heat a cast-iron grill pan over medium and lightly grease). Grill tofu over direct heat until golden and caramelized, about 3 minutes per side.
  • Meanwhile, transfer marinade to a small saucepan over medium and warm through, 1 to 2 minutes. Stir in scallions.
  • Transfer tofu to a serving plate and spoon over the sauce. Serve warm.

14 ounce packet of extra firm tofu
¼ cup of soy sauce
1/4 cup of olive oil
¼ cup of apple cider vinegar
½ tsp of garlic powder
½ tsp of sea salt
¼ tsp of black pepper

Steps:

  • You can't start grilling tofu until you've pressed it. The first stage of all grilled tofu recipes is to press and drain the liquid from your block. This allows the tofu to absorb your marinade's flavors, so you need to remove all the water you can from the tofu as possible. The best way to do this is by using a tofu press. You can also wrap your tofu in paper towels and press down firmly using a heavy object (a chopping board always does the job nicely). Leave your tofu to press for at least 20 minutes.
  • Once you've pressed and drained your tofu (you can repeat the process twice to be thorough, if you have enough time), you can slice your block into smaller pieces. Try to keep them around ½ an inch in width.
  • Next, it's time to prepare your grilled tofu marinades. Pour soy sauce, apple cider vinegar, and olive oil into a large mixing bowl and stir together. Add in salt, pepper, and garlic powder, before giving the mixture a good whisk to combine.
  • With your barbecue marinade mixed, you now need to leave your tofu to soak up all the flavor. We suggest a minimum of 4 hours, but for the best grilled marinated tofu, you should leave the tofu overnight. Pour the marinade into a bowl or resealable container, add the tofu, then leave covered in the refrigerator.
  • When you're happy with the marinade, it's time to learn how to grill tofu!
  • Preheat your oven to 450 degrees Fahrenheit, or start warming up the grill for your barbecue.
  • Tofu grilling doesn't take too long, so only leave your tofu pieces to cook for 8 minutes on either side. Don't forget to flip them over!
  • Push down on the tofu to give them some delicious, smoky grill marks, and then serve up piping hot with your favorite barbecue sides.
