Sweet potato & salmon tray bake | Jamie Oliver recipes image

Bursting with fresh Asian flavours, this easy salmon traybake can be on the table in well under an hour.

Number Of Ingredients 11

1 large sweet potato
2 sticks of lemongrass
2.5 cm piece of ginger
2 cloves of garlic
1 teaspoon sesame oil
150 ml organic vegetable stock
150 ml light coconut milk
6-8 lime leaves or 1 lime
1 long red chilli
4 x 150 g salmon fillets, from sustainable sources
low-salt soy sauce optional

Steps:

    1. Preheat the oven to 190°C/375°F/gas 5.
    2. Scrub the sweet potato, then slice into thin rounds. Arrange the slices, overlapping, in a large roasting tin.
    3. Bruise the lemongrass, then finely chop the tender parts. Peel and finely chop the ginger and garlic. Finely slice the chilli.
    4. Mix the sesame oil, stock, coconut milk and two-thirds each of the lemongrass, ginger and garlic. Pour over the potatoes, tuck in the lime leaves (or squeeze the juice on top and scatter over the zest) and sprinkle over the chilli.
    5. Roast for 20 to 25 minutes, or until the potatoes are done. About 8 to 10 minutes before the cooking time is up, sit the fish on the potatoes and top with the rest of the lemongrass, ginger and garlic.
    6. When the fish is just cooked, drizzle with soy sauce, if you like. Delicious served with green beans and mangetout.

These baked salmon cakes are light, healthy and a perfect Holiday appetizer! With wild Alaskan salmon, peppers, capers, breadcrumbs and a zesty avocado dressing.

1/2 pound wild Alaskan salmon filet (fresh or frozen (if frozen thaw overnight in the refrigerator))
olive oil cooking spray
1 tbsp olive oil
Kosher salt and freshly ground black pepper
3/4 cup small-diced red onion (1 small onion)
1 1/2 cups small-diced celery (4 stalks)
1/2 cup small-diced red bell pepper (from 1 small pepper)
1/2 cup small-diced yellow bell pepper (from 1 small pepper)
1/4 cup minced fresh flat-leaf parsley
1 tablespoon capers (drained)
1/4 tablespoon hot sauce
1 1/2 tsp Old Bay seasoning
1 cup seasoned breadcrumbs (or gluten-free crumbs)
3 tablespoon light mayonnaise
3 tablespoon Greek yogurt (0 %)
1 tablespoon Dijon mustard
1 large egg (lightly beaten)
3 large egg whites (lightly beaten)
Zesty avocado cilantro dressing

Steps:

  • Season salmon with salt.
  • Heat a large sauté pan over medium-high heat; when hot lightly spray with oil and add the salmon.
  • Cook until browned on one side, about 4 to 5 minutes then turn and cook an additional 4 to 5 minutes or until salmon easily flakes.
  • Set aside on a dish to cool.
  • Add the olive oil to the pan, then add the the onion, celery, red and yellow bell peppers, parsley, capers, hot sauce, Old Bay seasoning, 1/2 teaspoon kosher salt, and 1/2 teaspoon pepper in a large saute pan over medium-low heat and cook until the vegetables are soft, approximately 18 to 20 minutes.
  • Set aside to cool to room temperature.
  • Flake the salmon into a large bowl.
  • Add the bread crumbs, mayonnaise, yogurt, mustard, and eggs.
  • Add the vegetable mixture and mix well.
  • Cover and chill in the refrigerator for 30 minutes, this will make them easier to shape and become less sticky.
  • Preheat oven to 400°F.
  • Spray a non-stick baking sheet with cooking spray.
  • Shape the batter into 15 (scant 1/4 cup each) cakes and place on prepared baking sheet.
  • Bake about 10 to 12 minutes on each side, or until golden brown.

  • Preheat oven to 350°. Line a large rimmed baking sheet with foil and grease with cooking spray. To the center of the foil, lay lemon slices in an even layer. Season both sides of the salmon with salt and pepper and place on top of lemon slices. In a small bowl, whisk together butter, honey, garlic, thyme, and oregano. Pour over salmon then fold up foil around the salmon. Bake until the salmon is cooked through, about 25 minutes. Switch the oven to broil, and broil for 2 minutes, or until the butter mixture has thickened. Garnish with parsley before serving.

    1. Up to two weeks ahead of the big day, or at least 48 hours before you want to serve, scrub the beets and horseradish, then coarsely grate them into a bowl. Finely grate in the lemon zest, then add the salt, sugar and vodka. Mix together well.
    2. Place the salmon in a large tray and cover with the beetroot cure, patting everything down to ensure all of the flesh is in contact with it, then cover tightly with cling film. Place a weight on top to help pack everything down, then chill in the fridge for 36 hours, or until the salmon is cured and firm to the touch.
    3. Carefully unwrap the fish and remove it from the curing mixture. Run it under a tap to wash away any excess, draining all the juices, then pat dry with kitchen paper.
    4. Pick and finely chop the dill, then scatter it over the salmon flesh. Tightly wrap in cling film once again, then weigh it down and pop it back in the fridge.
    5. To make the scones, preheat the oven to 190°C/375°F/gas 5. Tip the yoghurt into a large mixing bowl.
    6. Use the empty yoghurt pot to measure out one pot each of rye flour and self-raising flour and add it to the yoghurt, along with the honey, 1 egg, bicarbonate of soda and a large pinch of sea salt. Stir with a fork until everything just comes together, then get in there with your hands and shape the dough into a ball. Dust a clean surface with flour and flatten the dough into a large disc, roughly 2.5cm thick.
    7. Grease a couple of large baking trays with oil. Stamp out 24 rounds with a 5cm crinkle cutter, dipping the cutter in flour if the dough starts to stick, and place them on the trays. Beat the remaining egg and use it to eggwash the scones, then sprinkle over the oats. Bake in the centre of the oven for 20–25 minutes, until puffed up and golden.
    8. Meanwhile, make the horseradish cream. Put the crème fraîche in a bowl and finely grate in the horseradish and lemon zest. Mix well and season to taste, squeezing in a little lemon juice if you like.
    9. To serve, use a long sharp knife to slice the salmon thinly at an angle, then dish it up with the warm scones and horseradish cream. Delicious with good quality butter, a little bunch of fresh cress, lemon wedges and a shot of Christmas-infused vodka (see tip below).
