ITALIAN RECIPE: if like me you have a slow digestion, or feel a bit sick everytime you eat Carbonara, this is a great twist you might want to try. BUT, you'll have to follow this recipe step by step. Remember: - Lemon will help you better digest the Eggs. - The Eggs must be well cooked. Sort of scramble eggs. If you put creamy eggs on lemon, won't taste as good.

4 handfuls Spaghetti Pasta
4 Egg Yolks
0.75 cup Guanciale
1 Onion
1 cup Parmesan Cheese
Olive Oil
2 Fresh Lemons

Steps:

  • Bring to the boil a large pan of salted water.
  • Throw in the Spaghetti Pasta.
  • Cut the Guanciale ( Pancetta or Smoked Bacon ) and Onion, and saute in a large frying pan with a drop of Olive Oil and some water to reduce frying, which would make the dish harder to digest.
  • Turn the fire off and set it on the side.
  • While the Pasta is cooking whisk the Eggs and add half Cheese.
  • Drain the Pasta al dente and throw it in the pan together with the Guanciale ( Pancetta or Smoked Bacon ) and continue to fry it, adding a second drop of Olive Oil...
