Pizza is amazing in just about any form, and these pepperoni pizza rolls are a great example. They make the perfect appetizer before dinner—along with a bowl of marinara for dipping.

ball refrigerated pizza dough (about 14 ounces), at room temperature

All-purpose flour, for sprinkling

1/2 c.

marinara sauce, plus more for dipping

1/2 c.

grated parmesan cheese

1/2 tsp.

dried oregano

1/2 tsp.

kosher salt

slices part-skim mozzarella cheese

2 oz.

sliced pepperoni, halved

sticks mozzarella string cheese

Steps:

  • Preheat the oven to 400˚. Roll out the pizza dough on a floured surface until it’s a very flat, large rectangle, about 11 by 18 inches. Spread with the marinara sauce, leaving a 1-inch border all around, then sprinkle with the parmesan, oregano and salt. Evenly top with the mozzarella slices and half of the pepperoni. Unwrap the string cheese and arrange it in a line on one long edge of the dough. Starting from that long edge, roll up the dough as tightly as possible so that the string cheese winds up in the middle of the roll. Pinch the seam of the dough to seal, then flip seam-side down. Slice into 1-inch pieces with a serrated knife and place the rolls cut-side up in a 12-inch round baking dish or cast-iron skillet. Tuck the remaining pepperoni into the folds of the pizza rolls, leaving just a little sticking out. Allow the rolls to rise at room temperature for 20 minutes. Bake the rolls until the crust is golden and the filling is bubbly, 20 to 25 minutes. Serve with extra marinara sauce for dipping.

1 loaf (1 pound) frozen pizza dough, thawed
1/2 cup pasta sauce
1 cup shredded part-skim mozzarella cheese, divided
1 cup coarsely chopped pepperoni (about 64 slices)
1/2 pound bulk Italian sausage, cooked and crumbled
1/4 cup grated Parmesan cheese
Minced fresh basil, optional
Crushed red pepper flakes, optional

Steps:

  • Preheat oven to 400°. On a lightly floured surface, roll dough into a 16x10-in. rectangle. Brush with pasta sauce to within 1/2 in. of edges., Sprinkle with 1/2 cup mozzarella cheese, pepperoni, sausage and Parmesan. Roll up jelly-roll style, starting with a long side; pinch seam to seal. Cut into 8 slices. Place in a greased 9-in. cast-iron skillet or greased 9-in. round baking pan, cut side down., Bake 20 minutes; sprinkle with remaining mozzarella cheese. Bake until golden brown, 5-10 minutes longer. If desired, serve with minced fresh basil and crushed red pepper flakes.

  • Preheat the oven to 400 degrees. Roll out the pizza dough onto a floured surface until it's a large rectangle. Smear with a little olive oil and sprinkle with salt. Spread the surface with marinara sauce, then sprinkle generously with Parmesan. Lay a couple of layers of mozzarella slices all over the sauce. Smear pesto all over the cheese. Lay on any other pizza ingredients (pepperoni, etc.) that you'd like. Unwrap string cheese and lay it in a line at the top of the dough. Roll it toward you so that the string cheese winds up in the middle of the roll of dough. Slice into 1 inch pieces and place in a baking dish or iron skillet. Allow the rolls to rise for 20 minutes.Bake for 15 minutes, until the bread is golden and the fillings are bubbly. Remove and serve immediately with extra marinara sauce.
