Country Chicken and Gravy Recipe: How to Make It image

Here's a lightened-up take on the classic southern comfort-food dish: chicken and gravy. This recipe has been a hit at our house since the first time we tried it! —Ruth Helmuth, Abbeville, South Carolina

Number Of Ingredients 18

3/4 cup crushed cornflakes
1/2 teaspoon poultry seasoning
1/2 teaspoon paprika
1/4 teaspoon salt
1/4 teaspoon dried thyme
1/4 teaspoon pepper
2 tablespoons fat-free evaporated milk
4 boneless skinless chicken breast halves (4 ounces each)
2 teaspoons canola oil
GRAVY:
1 tablespoon butter
1 tablespoon all-purpose flour
1/4 teaspoon pepper
1/8 teaspoon salt
1/2 cup fat-free evaporated milk
1/4 cup condensed chicken broth, undiluted
1 teaspoon sherry or additional condensed chicken broth
2 tablespoons minced chives

Steps:

  • In a shallow bowl, combine the first 6 ingredients. Place milk in another shallow bowl. Dip chicken in milk, then roll in cornflake mixture., In a large nonstick skillet, cook chicken in oil over medium heat until a thermometer reads 170°, 6-8 minutes on each side., Meanwhile, in a small saucepan, melt butter. Stir in the flour, pepper and salt until smooth. Gradually stir in the milk, broth and sherry. Bring to a boil; cook and stir until thickened, 1-2 minutes. Stir in chives. Serve with chicken.

turkey or chicken wings

carrots, cut into chunks

celery stalks, cut into chunks

large onion, cut into chunks

sprigs parsley

sprigs thyme

2

sprigs rosemary

3 tbsp.

olive oil

2 tsp.

kosher salt

Black pepper, to taste

1 c.

dry white wine

5 tbsp.

salted butter

1/2 c.

all-purpose flour

1 tbsp.

Worcestershire sauce

1 tsp.

kosher salt

Black pepper, to taste

Turkey drippings

Steps:

  • For the stock: Preheat the oven to 425 ̊. Toss the wings, carrots, celery, onion, parsley, thyme and rosemary on a baking sheet with the olive oil, salt and a few grinds of pepper. Roast until everything is a deep golden brown, 1 to 1 1/2 hours. Put the wings, vegetables and any drippings from the pan in a large pot and add the wine. Bring to a boil over medium-high heat and cook, stirring occasionally, until the wine is almost evaporated, 8 to 10 minutes. Add 6 cups water and bring to a boil. Reduce the heat to a simmer and cook, covered, until the stock is dark golden brown and the meat can easily be pulled off the bone, about 1 hour. Strain the stock through a fine-mesh strainer into a bowl and set aside. For the gravy: Melt the butter in a medium saucepan over medium-high heat. Whisk in the flour until well combined. Cook, whisking frequently, until the roux is a deep golden brown, about 10 minutes. Whisk in the stock until combined. Bring to a simmer and cook, whisking occasionally, until the gravy is thickened, 10 to 15 minutes. Stir in the Worcestershire sauce, salt and a few grinds of pepper. Pour your turkey drippings into a fat separator (or use a liquid measuring cup and spoon off the fat). Add the dark drippings to the gravy. Pour into a gravy boat.
