A very healthy, easy, tasty Asian dish that reheats well for lunch the next day! Can be served as a main dish or side dish. Check out the calorie count! Great with rice!

3 broccoli florets
1 head cauliflower
1 carrot, sliced
1 tablespoon garlic, minced
1 tablespoon gingerroot, minced
1/4 cup green onion, sliced
3 tablespoons oyster sauce
1 tablespoon hoisin sauce
1 tablespoon soy sauce
1/4 teaspoon red pepper flakes
salt

Steps:

  • Cut broccoli and cauliflower into smaller pieces.
  • Heat water in a large wok to boiling and add broccoli and cauliflower.
  • Let sit for 2-3 minutes, then remove from wok, drain and rinse with cold water.
  • In same wok, heat 1-2 T oil on high. Add ginger, garlic, carrot, and green onion. Cook until garlic starts to turn brown. Be careful not to overcook!
  • Add broccoli and cauliflower and stir.
  • Add sauce, stir, and let simmer for several minutes.
  • Serve immediately!

1 head cauliflower
2 teaspoons vegetable oil 
2 cloves garlic, minced 
2 tablespoons soy sauce 
Juice of 1 lime (or a splash of rice wine vinegar)
2 green onions, sliced 
1 tablespoon sriracha or other hot sauce, plus more if needed
Lime wedges, for serving

Steps:

  • Break up the cauliflower into large florets, then use your hands to break into very small florets.
  • Heat a large, heavy skillet over medium-high to high heat. Add the oil, then the cauliflower and garlic. Stir the cauliflower around in the pan, allowing it to get very brown in some parts. Cook for 3 minutes, then turn the heat to low.
  • Add the soy sauce, lime juice and most of the green onions, reserving the rest for serving. Stir and allow to cook for 1 minute, then add the sriracha and stir until incorporated. Add a little more sriracha if you want a deeper color and flavor.
  • Serve hot in a bowl. Sprinkle the remaining green onions on top and serve with lime wedges.

  • Prep the cauliflower: Break the head of cauliflower into florets that are relatively the same size. Set aside. Heat your air fryer to 350°. In a large bowl, combine the hot sauce, melted butter, salt, and garlic powder. Add the cauliflower and toss well to combine. Sprinkle over the cornstarch and toss again to coat evenly. Using tongs, place the cauliflower into the air fryer basket and fry for 15 minutes, tossing once or twice halfway through, until the cauliflower is browned in spots. To avoid overcrowding, you can do this in batches depending on the size of your air fryer. Meanwhile, make the blue cheese dressing: In a small bowl, gently fold all of the dressing ingredients together. Season to taste with salt and pepper. Serve the cauliflower with the blue cheese dressing on the side for dipping.

  • 1. Make the Fried Rice: In the bowl of a food processor, pulse the cauliflower until the mixture resembles rice, 2 to 3 minutes. Set aside. 2. In a large skillet, heat the oil over medium heat. Add the scallions, garlic and ginger, and stir-fry until fragrant, about 1 minute. 3. Add the carrots, celery and red bell pepper, and stir-fry until the vegetables are tender, 9 to 11 minutes. 4. Add the cauliflower rice and stir-fry until it begins to turn golden, 3 to 5 minutes more. Stir in the frozen peas and toss well to combine. 5. Add the rice vinegar, soy sauce and Sriracha, and toss to combine. Set aside. 6. Make the Garnishes: In a medium skillet, heat the oil over medium-high heat. Crack the eggs directly into the pan and cook until the whites are set but the yolks are still runny, 3 to 4 minutes. Season each with salt and pepper. 7. To serve, divide the cauliflower rice among four plates and top each with a fried egg. Garnish each plate with 1 tablespoon cilantro, 1 tablespoon scallions and 1 teaspoon sesame seeds.
