Spaghetti Chicken Parmesan Recipe: How to Make It image

I like to make this yummy chicken Parmesan with spaghetti when I have extra sauce on hand. The herbed coating on the tender chicken gets nice and golden. —Margie Eddy, Ann Arbor, Michigan

1/2 cup seasoned bread crumbs
1/2 cup grated Parmesan cheese, divided
1-1/2 teaspoons dried oregano, divided
1/2 teaspoon dried basil
1/2 teaspoon salt
1/4 teaspoon pepper
1 large egg
1 tablespoon water
4 boneless skinless chicken breast halves (6 ounces each)
2 tablespoons butter
2 cups meatless spaghetti sauce
1/2 teaspoon garlic salt
1 cup shredded part-skim mozzarella cheese
Hot cooked spaghetti

Steps:

  • In a shallow bowl, combine bread crumbs, 1/4 cup Parmesan cheese, 1 teaspoon oregano, basil, salt and pepper. In another shallow bowl, combine egg and water. Dip chicken in egg mixture, then coat with crumb mixture. , In a large skillet, melt butter over medium heat. Add chicken; cook until a thermometer reads 165°, 5-7 minutes on each side. , Meanwhile, in a large saucepan, combine spaghetti sauce, garlic salt and remaining 1/2 teaspoon oregano. Cook over medium heat until heated through. Spoon over chicken; sprinkle with mozzarella cheese and remaining Parmesan cheese. Serve with pasta.

This is one of our favorites. It is so easy and is great to serve to company. Great with French bread and salad.

Number Of Ingredients 7

3 skinless, boneless chicken breasts
1 (8 ounce) package spaghetti
1 (10.75 ounce) can condensed cream of chicken soup
1 (10 ounce) can diced tomatoes with green chile peppers
1 pound processed cheese food (eg. Velveeta)
salt and pepper to taste
1 pinch garlic powder

Steps:

  • Boil chicken in a large pot of salted water. When chicken is done, remove from pot, keeping water/broth at a boil. Shred chicken and set aside. Put spaghetti in boiling chicken broth and cook for 8 to 10 minutes, until al dente. When done, drain broth.
  • Return pot with cooked spaghetti to stove, put over low heat. Add shredded chicken, soup, diced tomatoes with chile peppers and cheese. Season with salt, pepper and garlic powder to taste. When cheese is melted, dinner is ready!

Meanwhile, in a large bowl, combine the chicken, soup, milk, onion, 1/2 cup cheddar cheese, 1/2 cup Swiss cheese, mushrooms, peppers, mayonnaise, steak seasoning and basil., Drain spaghetti. Add to chicken mixture; toss to coat. Transfer to a greased 13x9-in. baking dish. Cover and bake at 350° for 20 minutes. Uncover; sprinkle with remaining cheeses. Bake until heated through and cheese is melted, 5-10 minutes longer., Freeze option: Cover and freeze unbaked casserole. To use, partially thaw in the refrigerator overnight. Remove from the refrigerator 30 minutes before baking. Bake as directed, increasing time as needed to heat through.

  • Preheat oven to 400°. Drizzle cut sides of spaghetti squash with 1 tablespoon oil and season with salt and pepper. Place halves cut side down on a large baking sheet. Roast until tender, 30 to 35 minutes.  Let cool slightly, then use a fork to scrape squash strands into a large bowl. Keep boat halves.  Meanwhile, make alfredo sauce: Season chicken with salt and pepper on both sides. In a large skillet over medium heat, heat 2 tablespoons oil. Add chicken and cook until golden and cooked through, 8 minutes per side. Remove from skillet and let rest 5 minutes, then slice chicken into bite-sized pieces.  To same skillet, heat remaining tablespoon oil. Add garlic and cook until fragrant, 1 minute.   • Place chicken in a pot of water and boil on medium-low heat for 30 to 40 minutes. Remove chicken from pot and allow to cool slightly. Keep broth in pot. Melt 2 tablespoons butter in a large skillet. Throw in mushrooms, add 1/4 cup white wine, and sprinkle with salt and pepper. Cook over medium heat for 8 to 10 minutes, or until liquid has totally evaporated. Remove mushrooms from skillet. Set aside. Bring broth to a boil. Break spaghetti into thirds (shorter pieces).
