PORK LOIN WITH SAUERKRAUT AND APPLES – INSTANT POT RECIPES

Pork Loin with Sauerkraut and Apples – Instant Pot Recipes image

This is a traditional German dish often served on New Year’s Day for good luck. The cooked apples, onions, and kraut are sometimes served over mashed potatoes. It might sound like a crazy combination, but the flavors meld to create a sweet and savory sauce. Try them over cauliflower mashed potatoes to soak up all that goodness.

Provided by Kellyann Petrucci

Prep Time 15 minutes

Cook Time 60 minutes

Yield 4-6 servings

Number Of Ingredients 9

2-3 pound pork loin roast
1/2 teaspoon Pink Himalayan salt (or Celtic salt)
1/2 teaspoon pepper (freshly ground)
2 tablespoons butter (or ghee)
2 large onions (chopped)
3 cloves garlic (chopped)
1 cup chicken bone broth
4-6 cups sauerkraut (rinsed and drained)
3 Granny Smith apples (peeled, cored and chopped)

Steps:

  • Season roast with salt and pepper.
  • Set your Instant Pot to the Sauté setting. When display reads "hot", melt the butter or ghee, and brown the roast on all sides.
  • Remove the roast from the cooker and add onions, garlic, and broth. Scrape brown bits from the bottom of the pot.
  • Return roast to the Instant Pot. Using the Manual setting, adjust to high pressure and set to cook for 45 minutes.
  • When time is up, use the quick release method to release pressure and quickly add sauerkraut and apples to the cooker.
  • Bring back to full pressure for 5 minutes and again use the quick release method.
  • Slice and serve with sauce. Enjoy!

PORK ROAST AND SAUERKRAUT RECIPE | ALLRECIPES

Pork Roast and Sauerkraut Recipe | Allrecipes image

My family which is mostly German-Irish ate the same meal for New Year's every year of my life. It consisted of pork roast, sauerkraut, kielbasa and mashed potatoes. We ate the pork (pork roast and kielbasa) because pigs are a symbol of progress. Pigs push forward, rooting themselves in the ground before moving, and we need to move into the New Year in the same way. We eat sauerkraut, as it's believed it will bring blessings and wealth for the new year. It also reminds us that with the good comes the bitter as well. We eat potatoes to remind us that even as poor men we still had potatoes to eat.

Prep Time 15 minutes

Cook Time 6 hours 25 minutes

Yield 8 servings

Number Of Ingredients 10

1 tablespoon bacon drippings
1 cup minced onion
1 large red apple, diced
1 teaspoon caraway seeds
2 pounds sauerkraut, drained and rinsed
½ cup dry white wine
½ cup chicken stock
2 tablespoons brown sugar
2 pounds boneless pork loin roast
1 pound kielbasa sausage, cut into 3-inch pieces

Steps:

  • Heat bacon drippings in a Dutch oven over medium heat. Cook and stir onion in hot drippings until soft and translucent, about 5 minutes. Stir diced apple and caraway seeds with the onion and cook until apple is just tender, about 3 minutes more. Add sauerkraut and stir.
  • Stir white wine, chicken stock, and brown sugar together in a bowl; pour over the sauerkraut mixture.
  • Put pork roast into the bottom of the crock of your slow cooker. Pour sauerkraut mixture over the pork.
  • Cook on Low until the pork easily falls apart when pulled with a fork, 6 to 8 hours; add kielbasa sausage pieces and continue to cook until the sausage is heated through, 15 to 20 minutes more.

  • The cabbage will become increasingly sour the longer it’s fermented, so taste it now and again. When you like the flavour, transfer it to smaller sterilised jars. Will keep in the fridge for up to six months.

HOTDOGS AND SAUERKRAUT CASSEROLE | JUST A PINCH RECIP…
This IS my favorite meal! I love this! My mother would make this and so this is her version. I know others would add all kinds of things to this casserole but my mother made simple meals for seven and so I also like it simple as well as I like the dogs to soak up the kraut taste. I always eat this with boiled potatoes, green beans and applesauce. You can not appreciate it until you've tried it. I want this now, just thinking about it!

  • You can also use sausages instead of hotdogs. You can also put the dogs and the kraut in a bun with mustard on top and it is delicous with frys also. The flavor of the dog cooked in the kraut juice...its just to die for, if you love sauerkraut as I do!

CHEDDAR-SAUERKRAUT TOAST RECIPE - NYT COOKING
This 10-minute, vegetarian meal is happily reminiscent of a Welsh Rarebit, a Reuben sandwich and nachos. Toast slices of bread under the broiler, then top with the fermented trio of sauerkraut, pickled jalapeños and Cheddar. After a few minutes under the broiler, the cheese bubbles and crisps and the cabbage warms and mellows. The sauerkraut provides plenty of vegetables and, along with the jalapeño, tames the richness of the cheese. Adapt as you wish: Smear mustard or horseradish on the bread or trade the sauerkraut for kimchi.
