- Partially frozen is significantly easier to cut into thin slices, since it holds its shape when you cut it.
- Wash and rinse your vegetables / mushrooms. If you're using tofu (make sure it's firm), then cut it into cubes.
- Before my dad starts cutting meat (or anything), he usually puts a towel underneath the cutting board so it's more stable. Speaking from decades of experience, this helped him avoid many cuts (but not all) in the kitchen.
- This is much clearer in the video, but here are my dad's steps to preparing fresh squid for hot pot:
- We'll cut our about half of our tilapia fillets into ~1 cm slices, and marinate it with salt, cornstarch, water, and white pepper (to taste).
- My dad's epic homemade fish balls deserve their own recipe page (will be live soon).
- All we need to do is peel our daikon, cut it in half, and then cut it up into about 1 cm slices. We'll start boiling our hot pot broth with daikon, and then eat it at the end after it's soaked up all of the delicious flavors from the other foods.
- For my dad's dipping sauce, we'll be mixing light soy sauce, Shacha sauce, olive oil, sesame oil, oyster sauce, salt, sugar, chicken bouillon, chili oil, and boiled water.
BEEF AND BOK CHOY HOT POT RECIPE | MYRECIPES

- Combine first 6 ingredients, stirring with a whisk; set aside.
- Heat vegetable oil in a large Dutch oven over medium-high heat; add beef, browning on all sides. Add broth mixture, green onions, garlic, and ginger; bring to a boil.
- Cover, reduce heat, and simmer for 1 hour and 30 minutes or until beef is tender. Stir in bok choy and carrot, and cook 5 minutes or until tender. Serve beef mixture over noodles.

- To Prep Fill a clay pot or large pot two-thirds full with water. Add kombu in the water and let it soak for at least 30 mins. Meanwhile, combine all ingredients for the dipping sauce in a small bowl and set aside. Clean and cut vegetables. Arrange all the ingredients on a serving plate. Set a portable gas burner and place ingredient plate on a table. Give each guest a bowl of rice, an empty bowl for cooked food, and a sauce dish for the shabu shabu dipping sauce. To Cook Bring the broth with the soaked kombu to a boil. Add stem part of napa cabbage and shungiku, leek, carrots, some mushrooms, and tofu. You want to start with the ingredients that take the longest to cook. Now bring the pot of boiling broth to the table. Each person cooks their beef by dipping a slice of beef in the boiling broth with chopsticks. Swish it gently back and forth until the meat changes colour, about 10 secs will do. Enjoy the meat by dipping in the sauce. Add remaining ingredients as necessary in the boiling broth and simmer for a few minutes. End the meal with udon noodle. When most or all of the ingredients are taken out from the broth, add udon noodles in the pot and cook for a few minutes. Flavour udon with just bit of salt and white pepper.
