1?¼ cups fresh or frozen shelled peas
2 ripe avocados, halved, pitted, and peeled
1 - 2 tablespoon lime juice
¼ cup finely chopped red onion
1 clove garlic, minced
2 tablespoons chopped cilantro
1 small jalapeño pepper, seeded and thinly sliced
Tortilla chips

Steps:

  • Bring a medium saucepan of salted water to boiling. Add peas; simmer frozen peas 1 minute, or simmer fresh peas 5 minutes. Drain; rinse with cold water. Drain again and cool.
  • Place avocados and lime juice in medium bowl. With a fork, mash avocados. Add peas, onion, garlic, cilantro, and jalapeño. Season to taste with salt. Place guacamole in a serving bowl. Serve immediately or cover surface with plastic wrap and chill up to 2 hours. Drizzle with olive oil if desired; serve with tortilla chips. Makes 9 servings.

3 avocados - peeled, pitted, and mashed
1 lime, juiced
1 teaspoon salt
½ cup diced onion
3 tablespoons chopped fresh cilantro
2 roma (plum) tomatoes, diced
1 teaspoon minced garlic
1 pinch ground cayenne pepper

Steps:

  • In a medium bowl, mash together the avocados, lime juice, and salt. Mix in onion, cilantro, tomatoes, and garlic. Stir in cayenne pepper. Refrigerate 1 hour for best flavor, or serve immediately.
