Hot and dry noodles (Wuhan noodles) is a famous Chinese hot sesame noodles

200 g alkaline noodles ( , light yellow ones (either dried or fresh ones))
2 tbsp. sesame oil
2 garlic cloves
2 tbsp. warm water
2 tbsp. sesame paste
1 tbsp. sesame oil
1 tbsp. light soy sauce
1 tbsp. dark soy sauce
4 tbsp. warm water
1/8 tsp. Chinese five spice powder
small pinch of salt
pickled radish
green onion
sugar
vinegar (optional)
Chinese Chili oil

Steps:

  • Cook the dried noodles for 4-5 minutes or fresh ones for 3-4 minutes. Transfer out and drain.
  • Place the noodles to a clean operating board, add sesame oil and combine well. This process can cool down the noodles quickly and creating a chewy texture. Set aside to cool down completely.
  • Tune sesame paste
  • Other serving ingredients
  • Garlic water
  • Assemble the noodles

Half bowl Pure sesame sauce
A spoonful cucu old vinegar
A spoonful Soy sauce
Half a spoon salt
Right amount Capers
Right amount Spicy dried radish
Right amount chopped green onion
Right amount sesame
According to personal taste Oily pepper

Steps:

  • Put warm water in the sesame paste several times and stir in one direction until creamy.
  • Add light soy sauce, a small amount of dark soy sauce, CUCU old vinegar, and a pinch of salt to mix well.
  • After the water is boiled, remove it after about 6 years of maturity, drizzle with edible oil and quickly stir to cool it thoroughly, that is, dust the noodles.
    Blanch the brushed noodles with boiling water. If you like softer noodles, you can blanch more.
  • Pour the two sauces prepared before, add chopped green onion, capers, spicy diced radish, sesame seeds, and spicy oil. After mixing well, you can start eating!
