½ cup butter, softened
1 cup brown sugar
1 egg
1 tsp vanilla extract
1 ¾ cup all-purpose flour
1 tsp baking powder
1 cup chopped chocolate
1 pinch of salt

Steps:

  • Preheat oven to 350 Fahrenheit.
  • Brown the butter: Place butter in a cast-iron skillet. Set the skillet over the stove to melt the butter. Continue cooking until golden brown.
  • Place the browned butter in a bowl. Pour golden-brown sugar over the butter and beat until smooth.
  • Add egg and vanilla.
  • Add flour and baking powder. Stir until the dough just comes together.
  • Fold in half the chopped chocolate. Transfer the cookie dough into the skillet. Top with remaining chocolate.
  • Bake for 20-22 minutes or until the edges are brown.
  • Serve cookie warm.

3/4 cup butter, softened
3/4 cup sugar
3/4 cup packed brown sugar
2 large eggs, room temperature
1 teaspoon vanilla extract
2-1/4 cups all-purpose flour
1/2 cup instant hot cocoa mix (about 3 packets)
3 tablespoons baking cocoa
1 teaspoon salt
1 teaspoon baking soda
1/2 teaspoon baking powder
1 cup vanilla marshmallow bits (not miniature marshmallows)
1 cup semisweet chocolate chips

Steps:

  • Preheat oven to 375°. In a large bowl, cream butter and sugars until light and fluffy, 5-7 minutes. Beat in eggs and vanilla. In another bowl, whisk flour, cocoa mix, baking cocoa, salt, baking soda and baking powder; gradually beat into creamed mixture. Gently stir in marshmallow bits and chocolate chips., Drop dough by tablespoonfuls 2 in. apart onto greased baking sheets. Bake until set, 10-12 minutes. Remove to wire racks to cool completely.

    Bake in the oven for 8 minutes, or 12 minutes if cooking straight from the fridge. Remove the dish from the oven, being careful not to burn your hands. The dough will still be quite soft. Add a large dollop of ice cream and enjoy.
