Cheddar and Chive Scones Recipe | Allrecipes image

This lovely, easy recipe makes the perfect light and savory scones. They're great with butter or chutney.

1?¾ cups all-purpose flour
4 teaspoons baking powder
1 teaspoon dried chives
? teaspoon salt
? teaspoon cayenne pepper
5 tablespoons cold unsalted butter, cut in small pieces
1?¼ cups shredded aged Cheddar cheese, divided
½ cup whole milk
¼ cup sour cream
2 tablespoons whole milk

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Grease a baking sheet.
  • Sift flour, baking powder, chives, salt, and cayenne pepper together in a large bowl. Cut in butter using a pastry blender or rubbing between your fingers until flour mixture resembles pea-sized lumps. Stir in 1 cup cheese. Whisk 1/2 cup milk and sour cream together in a measuring cup. Pour all at once into flour mixture, and stir gently until well blended. Avoid overworking the dough.
  • Pat dough into 2- to 3-inch balls, depending on what size you want, using floured hands. Place on the prepared baking sheet and flatten slightly, letting scones barely touch each other. Brush tops with remaining milk. Sprinkle with remaining cheese. Let dough rest for about 10 minutes.
  • Bake in the preheated oven until tops are golden brown, 10 to 15 minutes. Let cool slightly; break scones apart before serving.

One-Skillet Hot Sausage and Cabbage Stir-Fry with Chives ... image

Sauté hot Italian sausage meat with ginger and garlic, mix with veg, and dinner’s a wrap!

Yield 4 servings

Number Of Ingredients 13

1 1-inch piece ginger, peeled, finely grated
4 garlic cloves, finely grated
1 pound hot Italian sausage, casings removed
2 tablespoons (or more) vegetable oil
6 ounces shiitake mushrooms, thinly sliced
6 cups very thinly sliced Napa cabbage, divided
2 tablespoons seasoned rice vinegar
2 tablespoons soy sauce
? cup thinly sliced chives
1 teaspoon toasted sesame oil
2 teaspoons sesame seeds
8 large flour tortillas or mu-shu wraps, warmed
Hoisin sauce and Sriracha (for serving)

Steps:

  • Using your hands or a wooden spoon, work ginger and garlic into sausage in a medium bowl. Heat 2 Tbsp. vegetable oil in a large skillet, preferably cast iron, over medium-high and cook sausage mixture, breaking up with a wooden spoon, until browned, crisp, and cooked through, 6–8 minutes. Using a slotted spoon, transfer sausage mixture to a clean bowl.
  • Increase heat to high and cook mushrooms in the fat in the skillet, tossing often, until browned and starting to release their juices, about 4 minutes (if skillet looks dry at any point, add a bit more oil). Add half of cabbage and cook, tossing often, until cabbage is wilted and tender, about 4 minutes. Drizzle in vinegar and soy sauce and cook, tossing, until liquid is mostly reduced and skillet is dry in spots, about 2 minutes.
  • Remove skillet from heat and mix chives, sausage, and remaining cabbage into stir-fry. Drizzle with sesame oil and sprinkle with sesame seeds.
  • Serve stir-fry with tortillas, hoisin sauce, and Sriracha for making individual wraps.

This is a delicous sauce that goes fantastic with any white meat, poultry or fish. It is a sauce that I first tasted in Nutter's restaurant (UK) served with pork. I bought his cook book which included the recipe and have made it myself countless times since. It is a family favourite and we all love it and use so much of it that this recipe designed to serve 4 actually only serves 3 of us!! A tip is to serve the sauce with a ladle or spoon instead of just pouring it so that you get plenty of the onion, otherwise the sauce tends to coem out and the onion stays in the bottom of the jug!
