These are very traditional old-fashioned bakery style cakes, very rich and eggy flavour, sometimes if you are lucky, you can find the lotus or red bean fillings inside. They are just so delicious you love it too!

4 Egg
100 gram Caster Sugar
130 gram Cake Flour
15 milliliter Vegetable Oil
to taste Almonds

Steps:

  • Preheat oven at 350 degrees F (180 degrees C).
  • Beat Egg (4) and Caster Sugar (100 gram) together until ribbon formed. It takes about 5 to 8 minutes.
  • Then add in Vegetable Oil (15 milliliter) and sift in Cake Flour (130 gram), fold it gently.
  • Lightly brush the cake tin with oil, or line with parchment paper. Pour the batter into the cake tin, tap the tin for few times to release the bubbles. Put some Almonds (to taste) on it.
  • Pop in a preheated oven for 20 to 25 minutes.
  • Serve with tea or coffee.

Taiwan's pineapple cake is very famous. The pineapple filling is made of pineapple and winter melon, which tastes good. But since I learned the Hong Kong-style pineapple cake, I have been in love with this recipe. I have made it many times, and my family and friends like it, so I shared the recipe with everyone. The Hong Kong-style pineapple cake filling does not contain winter melon, but only uses pineapple. The fruity flavor is richer. Although the dough is basically a cookie formula, it is added with almond flour, which adds a layer of flavor and tastes richer.

300 grams Low-gluten flour
150 grams butter
50 grams crystal sugar
3 grams salt
60 grams yolk
25 grams milk powder
50 grams Almond powder
900 grams Pineapple filling

Steps:

  • The almonds are ground with the superfine grinding function of the food processor to make almond flour for later use
  • Take the required amount of almond flour, and sift the required amount of low-gluten flour for use
  • Pour milk powder, low-gluten powder, and almond powder together and mix well
  • Dice butter to soften, add rock sugar powder
  • Whisk at low speed and fluffy

  • Add the mixed powder
  • Flip into a dough, just form a dough, don’t knead too much,
  • Divide the dough into 18 g doses
  • Divide the prepared pineapple filling into 25 grams
  • Flatten the dough and pack it into the filling
  • Molding with a square mold
