6 slice thickly cut bacon
1 large onion
2 clove garlic
1/4 c. tomato paste
2 c. chicken broth
c. brown sugar
c. Honey
1/4 c. sherry vinegar
3 tbsp. Dijon mustard
1 tsp. paprika
1 tsp. salt
1/2 tsp. Freshly ground pepper
4 can pinto beans

Steps:

  • Preheat oven to 350°F. Heat a large Dutch oven over medium heat. Add bacon and cook until crisp, about 5 minutes. Add onion and garlic cloves and cook until soft, about 6 minutes. Add tomato paste, chicken broth, brown sugar, honey, sherry vinegar, Dijon mustard, paprika, salt, and freshly ground pepper and stir to mix. Stir in pinto beans, increase heat to high, and bring mixture to a boil. Transfer to oven and bake, uncovered, until beans are tender and mixture is thickened, 40 to 45 minutes.

1 tablespoon ground cumin
1 tablespoon minced garlic
1/2 cup tomato puree
1 tablespoon canola oil
1/4 cup honey
1/4 cup cider vinegar
2 tablespoons molasses
1 tablespoon Worcestershire sauce
1/4 teaspoon salt
2 canned chipotle chiles in adobo, seeded and chopped
2 (28 ounce) cans baked beans

Steps:

  • Preheat oven to 300°.
  • Coat a large nonstick skillet with cooking spray and heat over medium-high heat.
  • Add shallots; sauté 4 minutes or until golden.
  • Add cumin and garlic; sauté for 1 minute.
  • Add tomato puree and oil, and cook for 2 minutes or until thick, stirring constantly.
  • Add honey and the next 5 ingredients (through chiles). Reduce heat; simmer for 10 minutes, stirring occasionally.
  • Combine beans and shallot mixture in a 2-quart baking dish. Bake for 1 hour or until thick and bubbly.
