One of my stepmother's recipes...she used to fix this for Easter.

Number Of Ingredients 4

1 (3 pound) boneless ham
1 tablespoon whole cloves
1 (6 ounce) can frozen orange juice concentrate, thawed
½ cup honey

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place ham in a shallow roasting pan, and stud ham with whole cloves. In a small bowl, mix orange juice concentrate with honey. Pour mixture evenly over ham. Tent ham with aluminum foil.
  • Bake ham for 1 hour, basting occasionally.

This ham—a nonnegotiable tradition at GZ's Easter brunch—is about to become your new go-to recipe.

½ cup (packed) light brown sugar
¼ cup fresh orange juice
¼ cup honey
¼ tsp. ground cinnamon
¼ tsp. ground cloves
? tsp. ground nutmeg
1 bone-in ham (8 lb.)

Steps:

  • Preheat the oven to 350°. In a small bowl, whisk the sugar, orange juice, honey, cinnamon, cloves, and nutmeg for the glaze.
  • Place the ham in a large roasting pan. Bake for 1 hour and 15 minutes. Remove the ham from the oven and brush all over with half of the glaze. Bake, brushing often with the remaining glaze, until an instant-read thermometer inserted into the thickest part of the ham registers 135°, about 45 minutes more. Transfer the ham to a platter and tent with foil. Let rest for at least 15 minutes before slicing. Tilt the roasting pan and skim the fat from the drippings. Transfer the drippings to a gravy boat and serve with the ham.

The hams are delivered at the stores already smoked and cooked; they are then sliced with the signature cut and then this recipe is used to caramelize them using a blow-torch. "Top Secret Recipes" only keeps this recipe up for two weeks on their site a year. The spices are ordinary pumpkin pie spices and you may substitute that for the first three spices. To get the coating just right, you must use a blowtorch. If you don't have one, you can find a small one in the hardware stores for around $15. Oh, Eleventhletter - I loved your suggestion to put it in a can of cola and baste it with that! Wonderful! THEN, when it's done - put on the sugar crust!
