2 cups whole natural almonds
2 tablespoons water
2 tablespoons honey
2 teaspoons vegetable oil
1/4 cup sugar
1/2 teaspoon salt

Steps:

  • Heat oven to 350°F. Place almonds in single layer in ungreased 15x10x1- inch pan. Bake 10 minutes or until toasted and fragrant.
  • In 10-inch nonstick skillet, heat water, honey and oil to boiling over medium heat. Stir in toasted almonds. Cook 3 minutes, stirring constantly, until liquid evaporates. Sprinkle sugar and salt over almonds; cook 5 minutes, stirring constantly, until almonds are reddish brown and coated. Remove from heat.
  • Spread nuts on cooking parchment paper; cool 10 minutes. Break nuts apart; cool completely. Store tightly covered at room temperature.

Spiced nuts are usually baked; this stovetop version speeds up the process. The smoky-spicy snack will store well in an airtight container for several days.

Yield Serves 10 (serving size: about 16 almonds)

Number Of Ingredients 6

1?½ cups raw, unblanched almonds
1 tablespoon sugar
1?½ tablespoons honey
½ teaspoon ground chipotle chile powder
¼ teaspoon ground cumin
¼ teaspoon salt

Steps:

  • Line a large baking sheet with parchment paper.
  • Place the almonds in a medium nonstick skillet; cook over medium heat for 6 minutes or until lightly toasted, shaking pan frequently. Combine the remaining ingredients in a 2-cup glass measure. Microwave at HIGH for 30 seconds. Add honey mixture to pan, and cook 2 minutes, stirring constantly. Arrange almond mixture on prepared baking sheet in a single layer; let stand 10 minutes. Break apart any clusters.
