Love family-friendly quick and easy dinner recipes? -- Then this Homemade Shake & Bake Chicken Thighs recipe is for you! Coated in a homemade version of classic Shake & Bake coating mix, these chicken thighs are easy to make, loaded with flavor, and absolutely sure to be a family favorite.

Number Of Ingredients 13

1 & 1/2 to 2 lbs. boneless, skinless chicken thighs
1 c. plain dried bread crumbs
1 & 1/4 tsp. salt
1 & 1/4 tsp. granulated garlic or garlic powder
3/4 tsp. onion powder
3/4 tsp. granulated sugar
1/2 tsp. paprika
1/4 tsp. dried parsley
1/4 tsp. black pepper
1/4 tsp. chili powder
1/4 tsp. oregano
1/8 tsp. dried thyme
1 & 1/2 T. canola or vegetable oil

Steps:

  • In a mixing bowl, combine bread crumbs and all seasonings (salt, granulated garlic, onion powder, sugar, paprika, parsley, pepper, chili powder, oregano, and thyme). Mix well.
  • Slowly drizzle and whisk in canola oil until thoroughly combined.
  • Line a rimmed jelly-roll baking sheet with foil and spray foil very lightly with non-stick cooking spray.
  • Spoon prepared Shake & Bake coating into a gallon-sized ziploc bag.
  • Season chicken thighs on both sides with a light sprinkling of salt and pepper.
  • Place 2 to 3 pieces uncooked seasoned chicken in ziploc bag with coating mix. Seal bag with air in it to allow meat room to move around. Shake until meat is thoroughly coated.
  • Place coated chicken on prepared baking pan, arranging pieces at least 1-inch apart.
  • Bake at 400℉ for 25-30 minutes, until chicken is cooked through.
  • Homemade Shake & Bake mix can also be used with bone-in chicken thighs, boneless or bone-in chicken breasts, chicken tenders, or to make homemade chicken nuggets. Coat chicken the same as instructed for boneless thighs. Bake as noted below:
  • Boneless, skinless chicken breasts: 400℉ for 30-35 minutes, until chicken is cooked through.
  • Bone-in chicken pieces: 375℉ for 40-45 minutes, until chicken is cooked through.
  • Chicken tenders or nuggets: 400℉ for 20-25 minutes, until chicken is cooked through.

3 pounds chicken, cut into pieces
½ cup all-purpose flour
1 teaspoon salt
1 teaspoon paprika
¼ teaspoon sage
¼ teaspoon ground black pepper
½ cup butter

Steps:

  • Preheat oven to 450 degrees F (230 degrees C).
  • Mix flour, salt, paprika, sage and pepper together in a bag. Add chicken parts in a bag and shake until well coated.
  • Melt butter/margarine in a 9x13 inch baking dish in the preheated oven. Place chicken in the baking dish skin side down and bake for 20 minutes. Turn pieces and bake another 20 minutes until tender and juices run clear.
