EASY HOMEMADE SMASH BURGERS RECIPE | KITCHN
These no-frills burgers are exactly what they sound like: ground beef that's cooked in a skillet and smashed with a spatula to create rough, craggly little patties. Here's how to master the technique at home.

Steps:
- Place 1 teaspoon kosher salt, 1 teaspoon seasoned salt, 1 teaspoon black pepper, and 1/2 teaspoon garlic powder in a small bowl and stir to combine.
- Divide 1 pound ground beef into 4 portions and form into rough, loose balls (do not press them together). Place on a baking sheet or large plate and sprinkle all over with the seasoning mixture.
- Heat a 10-inch or larger cast iron skillet over medium-high heat until very hot, about 3 minutes. Add 1 tablespoon canola oil. Working in 2 batches if needed so as not to crowd the pan, add the beef balls. Flatten the balls with a flat spatula to form rough 4-inch wide patties that are about 1/2-inch thick. Cook until the edges are brown and the beef no longer sticks to the skillet, 2 to 3 minutes. Flip and place 1 slice sharp cheddar cheese on top of each patty, if using. Continue cooking until the cheese is fully melted and burgers no longer stick to the pan, 2 to 3 minutes. Serve immediately on toasted buns with desired toppings.

Steps:
- In a small bowl, dissolve yeast in warm water. Let stand until creamy, about 10 minutes.
- In a large bowl, combine flour, salt and shortening. Stir in the yeast mixture. When the dough has pulled together, turn it out onto a lightly floured surface, and knead until smooth and elastic, about 8 minutes. Lightly oil a large bowl, place the dough in the bowl, and turn to coat with oil. Cover with a damp cloth, and let rise in a warm place until doubled in volume, about 45 minutes.
- Heat oil in a small saucepan over medium heat. Saute onion until tender. Stir in tomato paste and water. Season with sugar, salt, black pepper, garlic powder, basil, oregano, marjoram, cumin, chili powder and red pepper flakes. Simmer 15 to 20 minutes.
- Recipe makes 2 (12 inch) pizzas. Divide dough in half, and spread onto pizza pans. Cover with sauce, and desired toppings. Bake at 400 degrees for 20 minutes, or until crust is golden brown.
