2 onions, chopped
1 lb mushroom, sliced
1 tablespoon paprika
1 1/2 teaspoons dill
1 teaspoon caraway seed (optional)
1/8 teaspoon black pepper
3 tablespoons low sodium soy sauce
4 fluid ounces water or 4 fluid ounces vegetable stock
1 tablespoon olive oil
2 tablespoons unbleached flour
16 fluid ounces soymilk or 16 fluid ounces rice milk
2 tablespoons lemon juice
3 tablespoons red wine (optional)

Steps:

  • To brown and soften the onions, heat ½ cup of water or vegetable stock in a large pot and add the onions.
  • Cook over high heat, stirring often, until the onions are soft and all the liquid has evaporated, about 5 minutes.
  • Add another ¼ cup of water or vegetable stock, stir to loosen any bits of onion that have stuck to the pan, and continue cooking until most of the liquid has evaporated and onions begin to brown, about 3 minutes.
  • Add the sliced mushrooms and spices.
  • Lower the heat slightly, cover and cook 5 minutes, stirring frequently.
  • Add the soy sauce and stock.
  • Cover and simmer 10 minutes.
  • In a separate pan, mix the olive oil and flour to form a thick paste.
  • Cook, stirring constantly, for 1 minute then whisk in the soy milk or rice milk and cook over medium heat, stirring frequently, until steamy and slightly thickened.
  • Add the milk mixture to the soup.
  • Stir in the lemon juice and red wine just before serving.

2 Onions, chopped
1 Lb (about 450 grams) mushroom, sliced
1 tablespoon paprika
1 ½ Teaspoons dill
1 teaspoon caraway seed (optional)
1/8 teaspoon black pepper
3 Tablespoons low sodium soy sauce
½ US cup water or vegetable stock (plus ¼ cup water or vegetable  stock)
1 Tablespoon Olive oil
2 Tablespoons unbleached flour
2 cups US soymilk or rice milk
2 Tablespoons lemon juice

Steps:

  • Step 1:In a large pot, heat ½ cup of water (or vegetable stock) over high heat.  Add the onions and cook until all the water is evaporated and the onions are tender.Note: Stir often to make sure the onions don’t stick to the bottom of the pot.
  • Step 2:Add ¼ cup more water (or vegetable stock) and stir to lose any onions that are stuck at the bottom. Continue cooking until the water has mostly evaporated and the onions begin to brown (about 3 minutes). Then add the mushrooms, paprika,  dill, caraway seeds, black pepper.
  • Step 3:Lower the flame slightly. Cover the pot and cook for another 5 minutes.  Remember to stir often. Next add soy sauce and stock, cover again, and simmer for 10 minutes.
  • Step 4: Take a pan and mix olive oil with the flour to make a thick paste. Cook for 1 minute, stirring continuously. Then mix in the soy milk (or rice milk). Cook over medium heat while stirring frequently, until it’s steamy and a little thickened.
  • Step 5:Add this mixture to the soup. And your soup is ready. Stir in the red wine and lemon juice just before you serve it.
