I suffer from Candida Albican and can't have yeast but wanted to still eat crescent rolls! I came upon this recipe from Better Batter and this is awesome!

Total Time 45 minutes

Prep Time 15 minutes

Cook Time 30 minutes

Yield 8 serving(s)

Number Of Ingredients 3

1/4 cup butter, room temperature
3/4 cup shredded cheese or 3/4 cup cultured nut cheese
1 cup flour (any flour, can even be gluten free)

Steps:

  • In the bowl of your mixer, combine all ingredients to form dough. Wrap in plastic wrap and chill 2 hours.
  • Preheat oven to 350 degrees.
  • On lightly floured surface roll the dough into a 14 inch circle. Cut into 8 triangles.
  • Roll each triangle from wide end to tip, turning ends to form a crescent shape.
  • Place on baking stone or cookie sheet.
  • Bake 30 minute till golden.
  • Serve warm.

Number Of Ingredients 8

1 tablespoon active dry yeast
1 teaspoon plus 1/3 cup sugar
1/2 cup warm water (110° to 115°)
1/2 cup butter, softened
1/2 cup warm 2% milk (110° to 115°)
1 large egg, room temperature
3/4 teaspoon salt
4 cups all-purpose flour

Steps:

  • In a large bowl, dissolve yeast and 1 teaspoon sugar in warm water. Add butter, milk, egg, salt, remaining sugar and 2 cups flour. Beat until smooth. Stir in enough remaining flour to form a soft dough., Turn onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1 hour., Punch dough down. Turn onto a lightly floured surface; divide in half. Roll each portion into a 12-in. circle; cut each circle into 12 wedges. Roll up wedges from the wide end and place point side down 2 in. apart on greased baking sheets. Curve ends to form crescents. Cover and let rise in a warm place until doubled, about 30 minutes. , Preheat oven to 350°. Bake until golden brown, 10-12 minutes. Remove from pans to wire racks.

We live where cans of crescent roll dough are not available. I searched the 'net for something I could use as a substitute. While I don't claim these are EXACTLY like the canned ones, they're close enough for us. This came from Allrecipes.com (called Blue Ribbon Overnight Rolls). I've always made the dough using a bread machine, so I can't give any feedback making it without the machine. The dough is very easy to work with. EDIT: I just realized this is very similiar to "Recipe #136121", but these ingredients are slightly different and provide bread machine instructions.
