Baked Ziti Casserole Recipe: How to Make It image

1 package (16 ounces) ziti or small tube pasta
1 large egg, lightly beaten
1 carton (15 ounces) part-skim ricotta cheese
1/2 cup grated Parmesan cheese, divided
1 jar (28 ounces) meatless spaghetti sauce
2 cups shredded part-skim mozzarella cheese

Steps:

  • Cook pasta according to package directions. Drain pasta; set aside. In a small bowl, combine the egg, ricotta and 1/4 cup Parmesan cheese. , Spread 1 cup spaghetti sauce in a 13x9-in. baking dish coated with cooking spray. Top with a third of the pasta, half of the ricotta mixture, 2/3 cup mozzarella cheese, 1 tablespoon Parmesan cheese and 1 cup sauce. Repeat layers of pasta, ricotta mixture and mozzarella cheese. Sprinkle with 2 tablespoons Parmesan cheese. Top with remaining pasta, sauce mozzarella cheese and Parmesan cheese. , Cover and bake at 375° for 45-50 minutes or until heated through.

ziti

1 tbsp.

extra-virgin olive oil

1

medium onion, chopped

2

garlic cloves, minced

Pinch crushed red pepper flakes

1 lb.

ground beef

2 tbsp.

tomato paste

1 tsp.

dried oregano

1

(28-oz.) can crushed tomatoes

1 1/2 c.

ricotta (preferably whole milk)

2 tbsp.

thinly sliced basil, plus more for serving

1/2 c.

freshly grated Parmesan

2 c.

shredded mozzarella

Steps:

  • Preheat oven to 350°. In a large pot of boiling salted water, cook pasta until very al dente. Drain. In a large saucepan over medium heat, heat oil. Add onion and cook, stirring often, until onion is soft, about 5 minutes minutes. Stir in garlic and red pepper flakes and cook 1 minute. Add meat and season with salt and pepper. Cook until no longer pink, about 6 minutes, then drain and discard fat. Stir in tomato paste and oregano and cook 2 minutes more, until slightly darkened. Add crushed tomatoes and season with salt and pepper. Bring sauce to a simmer, reduce heat and cook, stirring occasionally, until slightly reduced and flavors have melded, 15 to 20 minutes. Remove from heat and stir in basil. In a large bowl, combine sauce and pasta. Fold in ricotta, leaving large clumps. Spread about half the pasta mixture into the bottom of a 9"-x-13" baking dish. Sprinkle half the mozzarella and half the Parmesan over the pasta. Top with the rest of the pasta mixture and sprinkle with remaining cheeses. Cover with foil and bake until cheese is bubbling, about 20 to 25 minutes.  Garnish with more basil before serving.
