GRANDMA'S POLISH PEROGIES RECIPE | ALLRECIPES

Grandma's Polish Perogies Recipe | Allrecipes image

My grandfather is Polish, and his mother taught my grandmother how to make these delicious perogies. The recipe has been in the family for generations, with a few alterations of course! Serve plain, or with butter, sour cream, bacon, etc. Perfecting the perogie technique takes time, and after a while, you will develop your own system.

Provided by STEPH577

Categories     Dumplings

Total Time 2 hours 0 minutes

Prep Time 2 hours 0 minutes

Yield 60 perogies

Number Of Ingredients 12

4 ½ cups all-purpose flour
2 teaspoons salt
2 tablespoons butter, melted
2 cups sour cream
2 eggs
1 egg yolk
2 tablespoons vegetable oil
8 baking potatoes, peeled and cubed
1 cup shredded Cheddar cheese
2 tablespoons processed cheese sauce
1 dash onion salt to taste
salt and pepper to taste

Steps:

  • In a large bowl, stir together the flour and salt. In a separate bowl, whisk together the butter, sour cream, eggs, egg yolk and oil. Stir the wet ingredients into the flour until well blended. Cover the bowl with a towel, and let stand for 15 to 20 minutes.
  • Place potatoes into a pot, and fill with enough water to cover. Bring to a boil, and cook until tender, about 15 minutes. Drain, and mash with shredded cheese and cheese sauce while still hot. Season with onion salt, salt and pepper. Set aside to cool.
  • Separate the perogie dough into two balls. Roll out one piece at a time on a lightly floured surface until it is thin enough to work with, but not too thin so that it tears. Cut into circles using a cookie cutter, perogie cutter, or a glass. Brush a little water around the edges of the circles, and spoon some filling into the center. Fold the circles over into half-circles, and press to seal the edges. Place perogies on a cookie sheet, and freeze. Once frozen, transfer to freezer storage bags or containers.
  • To cook perogies: Bring a large pot of lightly salted water to a boil. Drop perogies in one at a time. They are done when they float to the top. Do not boil too long, or they will be soggy! Remove with a slotted spoon.

TOP SECRET RECIPES | TACO BELL ENCHIRITO COPYCAT RECIPE ...
Since Taco Bell brought the Enchirito back from the dead a couple years ago the product's formula has changed a bit. With the exclusion of the sliced black olives on top, plus a few other minor changes, this recipe copies the "new" formulation of the chain's enchilada/burrito fusion product first introduced in the early 60s. The technique for preparation has also been improved from the recipe found in the first Top Secret Recipes book and published here on the site. So, until Taco Bell changes it again, this is the ultimate clone that makes enough for an entire family of Enchirito lovers. With or without the olives. Check out my improved formula for Taco Bell beef in this recipe.  Source: Top Secret Recipes by Todd Wilbur.

TOP SECRET RECIPES | GENERAL FOODS INTERNATIONAL COFFEES
With just a few simple ingredients you can recreate the European-style coffees that come in rectangular tins at a fraction of the cost. Included here are clones for Cafe Vienna, French Vanilla Cafe, and Suisse Mocha. Since these famous instant coffee blends are created by Maxwell House, it's best to use Maxwell House instant coffee, although I've tried them with Folger's and Taster's Choice, and the recipes still work out fine. You'll also need a coffee bean grinder to grind the instant coffee into powder. When you're finished making the mix, you can store it for as long as you like in a sealed container, until you're ready for a hot coffee drink. When that time comes, measure some of the mix into a cup and add boiling water. Stir well and enjoy while watching shows about Europe on the Travel Channel to enhance the experience. CLASSIC CHEESECAKE – INSTANT POT RECIPES
If social media is to be believed (does Facebook lie?), a cheesecake is one of the first things people make in their Instant Pots. We’ve seen a lot of techniques over the years — and written a lot of pressure-cooker cheesecake recipes, too — and we can tell you we heartily don’t get why people tend to overcomplicate what can be a fairly simple process for a rich, mousse-like (not New York–style) cheesecake. First, don’t cover the cheesecake. True, it can get a drop or two of moisture on top. You can blot these off with a paper towel when you open the lid. A cover on the pan gets in the way as the batter rises. You end up with a top that’s partly fused to the foil, often a mess. Second, never use the quick-release method — which instantly brings any liquid left in the cheesecake to a near boil even after the cake has mostly set, resulting in bumps and cracks. Instead, use a natural release for a better texture, set, and look. Finally, cook the cheesecake only on HIGH pressure, not MAX, which is too aggressive for a successful cheesecake.

  • To serve, uncover and run a thin knife between the pan and the cake. Unlatch the sides of the pan and open it to remove the cake inside. If desired, use a long, thin knife to slice the cake off the pan’s base and use a large metal spatula to transfer the cheesecake to a serving platter.

HOW TO TELL IF AN ITEM IS MADE OF REAL SILVER | MARTHA STEWART
Oct 11, 2021 · Sterling silver catches the light like no other, which is why we love the look of sterling silver in flatware, vases, jewelry, and decorative accents.
