These cornmeal and buttermilk cakes are the perfect side dish for a classic Southern meal.

Number Of Ingredients 10

1 cup Gold Medal™ all-purpose flour
1 cup yellow cornmeal
1 tablespoon sugar
3 1/2 teaspoons baking powder
1/2 teaspoon salt
2 eggs
3/4 cup buttermilk
1/3 cup water
1/4 cup vegetable oil
Vegetable oil for frying

Steps:

  • In large bowl, mix flour, cornmeal, sugar, baking powder and salt. In another bowl, beat eggs, buttermilk, water and 1/4 cup oil with whisk. Add to dry ingredients; stir just until combined.
  • In cast-iron or other heavy skillet, heat about 2 tablespoons oil over medium heat. For each hoecake, pour about 1/4 cup batter into hot skillet. Cook until browned on both sides. Repeat with remaining batter, adding more oil to skillet as needed.

2 eggs, slightly beaten
1 cup milk
1/4 cup vegetable oil or melted shortening
1 1/2 cups yellow cornmeal
1 cup Gold Medal™ all-purpose flour
1/4 cup sugar
2 1/4 teaspoons baking powder
3/4 teaspoon salt

Steps:

  • Heat oven to 450°F. Grease or spray 8- or 9-inch square pan.
  • In large bowl, mix all ingredients. Pour into pan.
  • Bake 20 to 25 minutes or until toothpick inserted in center comes out clean. Serve warm if desired.

Cover the pot and let it slow cook for about 1 hour. After an hour add bay leaves and whole black peppercorn. Let it slow cook for another hour. Lastly, add red potatoes, onion, crushed red pepper and cook for another hour.
