1 HMR Sausage and Potato in Gravy Entree
1 cup cubed sweet potato
1/2 cup sliced mushrooms
1/4 cup chopped red bell pepper
1/4 cup chopped yellow bell pepper
1/2 avocado
optional: fat-free sour cream, diced green onion, and chili flakes

Steps:

  • 1. Preheat oven to 425 degrees.
  • 2. Add cut vegetables to sheet pan and sprinkle with salt, pepper, and chili flakes.
  • 3. Cook for 20-30 minutes, or until vegetables are crispy.
  • 4. Heat entree according to package and mix with cooked vegetables. 
  • 5. Top with avocado, fat-free sour cream, and diced green onion.

1 HMR 500 Chicken Soup
1/2 Cup broccoli florets
1/4 Cup carrot chopped
1/4 Cup onion
1 clove garlic
1 spritz cooking spray
1 Cup water
1/4 Teaspoon powdered cheese (like Molly McButter)

Steps:

  • 1. Spray bottom of soup pot with cooking spray.
  • 2. Crush garlic clove.
  • 3. Add broccoli, carrots, onion, and garlic to pot on medium high heat, sautee.
  • 4. When vegetables are soft add water and soup; stir to combine.
  • 5. Pulse with stick blender or in blender/food processor until desired consistency.
  • 6. Finish with powdered cheese and fresh cracked pepper.
