Just in time for Mother's Day, these almond flour pancakes make for a filling and healthy brunch treat! Grain-free and filled with nutrition, these are a perfect way to start your day. Top with your favorite fruit for a well-balanced tasty breakfast. This recipe supports the Phase 2 diet plan. This recipe makes about 2 servings at 286 calories per serving.

1/2 Cup Almond flour
1/2 tsp baking soda
Dash of salt
Dash of cinnamon
2 Eggs
1/2 tsp vanilla extract
1 Banana (mashed)
Toppings of choice (fruit, chia seeds, almond butter, etc.)

Steps:

  • 1. In a medium bowl mix together the almond flour, baking soda, salt, and cinnamon.
  • 2. Add eggs, vanilla, and mashed banana. Mix well.
  • 3. Heat a pan over medium to high heat and spray with cooking spray.
  • 4. Drop a spoonful of the batter on to the pan and let it cook for 3-4 min. Flip the pancake and cook 1-2 min on other side. Makes about 6 pancakes.
  • 5. Top with your toppings of choice and enjoy!

These fluffy, moist pancakes offer ample protein to keep you full all morning long in Phase 2. Pair with fresh fruit or a touch of honey for additional sweetness. Makes 7-8 pancakes; 3-4 pancakes = 1 serving.

Number Of Ingredients 9

1/4 cup plain Greek yogurt
1/2 cup rolled oats
1/4 cup mashed sweet potato
2 egg whites, 1 large egg
1-2 Tbs unsweetened almond milk or skim milk
1 1/2 tsp maple syrup
1/2 tsp ground cinnamon
1/2 tsp vanilla extract
1/2 tsp baking powder

Steps:

  • 1. Preheat a skillet over medium heat and coat it with cooking spray.
  • 2. Add the ingredients to a blender and process until the batter is smooth and frothy.
  • 3. Pour the batter straight from the blender onto your skillet for desired size of pancakes.
  • 4. Cook them until the edges have set and bubbles begin to form on the tops, about 2 minutes. Flip and cook for another 2 minutes.
  • 5. Repeat until all the batter is gone, making sure to coat your skillet again with cooking spray between each batch.
  • 6. Top with desired toppings (sugar-free maple syrup, fruit, etc.).
