High Protein Vegan Breakfast Sandwich on Sour Dough Toast ... image

Tofu protein packed breakfast sandwich.

Number Of Ingredients 11

1/4 cup tofu
2 pieces sour dough toast
1/4 cup spinach
1 tsp nutritional yeast
1 garlic clove
1 mushroom
1/4 tsp garlic powder
1/4 tsp turmeric
dash salt & pepper
1/4 avocado
2 slices tomato

Steps:

  • Add tofu, spinach, nutritional yeast, garlic clove, mushroom, garlic powder, turmeric, salt and pepper to a pan
  • Cook for 10-15 minutes on low-medium heat
  • Heat two slices of sour dough toast in a toaster
  • Spread thin layer of avocado on each piece of sour dough toast
  • Add tofu mixture to both pieces of sour dough toast
  • Garnish with tomato slice
