MISSISSIPPI GRILLED CATFISH RECIPE | HIDDEN VALLEY® RANCH
Mississippi Grilled Catfish

Steps:
- Light grill using Kingsford® charcoal.
- Mix dressing and cheese in medium bowl. Place potato chips in one quart Glad® Food Storage bag, seal and crush. Tear 4 5-inch individual sheets of aluminum foil and spray with nonstick cooking spray. Line up dressing mixture, chip bag and foil to make an assembly line. Dip catfish fillets in mixture until well coated and then place in potato chip bag. Once fish is coated with chips, place on aluminum foil sheet.
- Grill catfish on covered grill over indirect heat for about 8 minutes or until it flakes easily with a fork.

- In a small dish, combine the seasoning mix with olive oil and white wine, and mix until smooth. Place the fish in a shallow dish and cover with the wine mixture. Chill covered for 1 hour.
- Preheat the grill or broiler. Cook the the fish for 5 minutes on each side or until it flakes easily with the side of a fork.
- Serve immediately, with lemons for squeezing.

- Fry a "test piece" for about 3-5 minutes til golden and fish is done in the middle. (Flakes when broken in half.) *Write down the time so you know how long to fry the rest. *This depends on what oil you are using, how hot your oil is and how thick your catfish fillets are. Every fish varies just a bit. ;) Fry about 8-10 pieces at a time *not overcrowding*. Place cooked fish onto newspaper-lined baking sheet as you go. (Keep warm in low oven if desired.) Serve just as is or transfer to a platter. Eat hot and enjoy with tartar sauce and lemon wedges!
