HOMEMADE RANCH / BLEU CHEESE DRESSING
Homemade Ranch / Bleu Cheese Dressing is divine! So when I went in search of a ranch/bleu cheese dressing I could make at “home”, I was surprised there was hardly anything out there! I did, however, manage to find one recipe that sounded promising and not only was it promising, it is now my favorite dressing. So I decided to try it and share it with you! I did make a few minor changes….so if you try it, I would love to know what you think:

- In a large bowl, beat all ingredients except bread with an electric mixer until thoroughly blended. Transfer mixture to a serving bowl, cover tightly, and refrigerate overnight.
- Let stand at room temperature for 30 minutes before serving with bread.

- Place flour, egg and breadcrumbs in three separate dishes. Season chicken with salt and pepper. Coat both sides of the chicken with flour, shaking off any excess, then dip in egg. Coat both sides with the breadcrumbs, pressing to help the crumbs stick. Heat oil in a medium saucepan or deep fryer. Add the chicken and cook, turning once, until golden brown, or until an instant-read thermometer inserted into the thickest part registers 165°F (2 to 3 minutes per side). Remove from heat; let sit 2 to 3 minutes. Transfer to a clean bowl and toss with hot sauce, or place on bun and drizzle hot sauce over the top. Serve with arugula on the bun and drizzle with Hidden Valley® Blue Cheese dressing.
