Steps:
- In a heavy saucepan, combine the chocolate (broken into 1/4-inch pieces) , butter, sugar, water, and light corn syrup.
- Stir the mixture continuously over medium heat until the chocolate and butter have melted and the sugar has dissolved.
- When the sauce comes to a boil, lower the heat and continue boiling gently for 10 minutes.
- Remove the thickened sauce from the heat, and stir in the vanilla extract.
- Store covered in the refrigerator.
- To reheat, place in a small microwave-safe bowl. Microwave on medium 6 to 8 minutes, stirring after the first 3 minutes.

- Bring cream, corn syrup, sugar, cocoa, salt, and half of chocolate to a boil in a 1 to 1 1/2-quart heavy saucepan over moderate heat, stirring, until chocolate is melted. Reduce heat and cook at a low boil, stirring occasionally, 5 minutes, then remove from heat. Add butter, vanilla, and remaining chocolate and stir until smooth. Cool sauce to warm before serving.

May 22, 2006 · Herrell's Hot Fudge is very good. The only problem I have with it is that you have to heat it to such a high degree so the sugar solids will melt completely. It's annoying to have to break up these things that feel like really small pebbles when you're eating a sundae.
