HERE COMES THE FUNNY RECIPES

Steps:

• Preheat oven to 325?. Grease well, and flour, two 1½ quart, oven-proof, glass mixing bowls. Prepare cake mix as directed on package, or prepare your favorite, two-layer yellow cake. Bake for 50 minutes, or until cakes test done (comes out clean when inserted in center) with a toothpick, or cake tester. Cool cakes for about 15 minutes, then remove from bowls onto racks, and let cool completely. See cake assembly instructions below.
• While cake is cooling: Make a collar by cutting a strip of heavy cardboard, 15½ inches long, by 3½ inches wide. Form a circle and overlap the ends by ½ inch. Staple, pin, or tape at bottom of overlap to hold together. Fold down the 2 upper corners to form lapels. This will create the collar to hold the head of the bunny. Put this cardboard collar on a small plate. See Assembly instructions for Cake. BACK UP TIPS: For stability, depending on the thickness of your cardboard and type of cake, if you have a problem with the cake sitting on the one collar, do this: Make a second ‘collar’ ½ inch narrower, 3 inches wide, and 14½ inches long, stapled closed, and placed it inside the collar that will show. This also hides the inside of the outer collar, behind the bow. If no extra collar is needed, just check the space behind the bow. If the cake and frosting are not enough to hide the bottom of the cake, the little space behind the front collar, either slip a piece of cardboard, an extra bit of cake, frosted and with coconut, to hide the space. You can see in the picture, the ‘neck’ is filled in behind the collar, under the bunny’s head. You do not want the plate to show.
• FOR DECORATOR FROSTING Measure all ingredients into a large bowl and beat three minutes at medium speed, then 5 minutes at high speed. Add more sugar to thicken or water to thin, as needed, until frosting is desired spreading consistency. TO ASSEMBLE THE CAKE FOR BUNNY HEAD Slice off tops of cakes to make them level. Set one cake rounded-side down inside collar. Spread flat side with frosting; top with other layer, flat side down to make the round head. Frost outside of cake with remaining frosting. Sprinkle with coconut. Gently pat coconut to keep it in place. Make bunny’s face from gumdrops and whiskers from pipe cleaners. Cut out ears from construction paper. Use two paper layers, outer ear larger for a smaller pink paper inside ear to adhere, leaving a white border. (See picture.) Make a bow tie from wide ribbon.
• If desired, place plate of bunny cake onto a wide flat basket, and toss Easter grass around the sides of plate to cover bottom of basket.
