Here’s our easy roasted green beans recipe made with garlic, capers, and herbs. You can make these beans in about 20 minutes! Our family loves these tasty, perfectly cooked green beans! In the recipe below, we have shared a basic recipe as well as an optional step to finish the beans with a mixture of garlic, capers, and herbs (delicious).

Yield Makes 4 servings

Number Of Ingredients 7

1 tablespoon olive oil
1 pound green beans, stem ends snapped off
1/4 teaspoon fine sea salt
1/4 teaspoon fresh ground black pepper
2 tablespoons drained capers, roughly chopped
1 tablespoon minced garlic, 3 to 4 cloves
1 tablespoon chopped fresh dill or use 1 teaspoon dried dill

Steps:

  • Heat the oven to 425 degrees Fahrenheit (220C). Line a baking sheet with parchment paper or a silicone baking mat — lining the pan is not entirely necessary, but this does help with cleanup.
  • In a large bowl, toss the green beans with the oil, salt, and black pepper. Add the seasoned beans to the baking sheet. Spread them out into one layer.
  • Roast until the beans are tender and a little wrinkled, 10 to 15 minutes.
  • Serve or continue to the next step if you are making the garlic herb green beans.
  • Add the garlic and capers to the roasted beans. Toss well, spread everything out into a single layer, and continue to roast for another two to three minutes so that the garlic cooks. Toss well, and then serve with the dill sprinkled over the top.

Number Of Ingredients 11

1 cup plain fat-free Greek yogurt
½ cup reduced-fat mayonnaise
2 teaspoons Worcestershire sauce
2 teaspoons fresh lemon juice
½ teaspoon hot pepper sauce (such as Tabasco)
3 canned anchovy fillets
1 garlic clove, minced
? cup fresh parsley leaves
¼ cup fresh tarragon leaves
¼ cup chopped fresh chives
¼ cup fresh chervil leaves (optional)

Steps:

  • Place first 7 ingredients in a blender or food processor; process until smooth. Add parsley and remaining ingredients; process until herbs are minced.
