- Brush any soil off mushrooms; cut mushrooms into 1-inch dice.
- Melt butter with oil in large skillet over medium-high heat. When butter stops sizzling, add mushrooms; sauté until tender, about 4 minutes. Add shallots, garlic, thyme, salt and pepper. Sauté 2 minutes and serve.

Steps:
- For the sauce, combine in a pot and warm over medium heat, then reduce at low bubble while you prepare noodles
- For the lo mein, bring a large pot of water to boil for pasta
- Heat oil in a large nonstick skillet over high heat, 3 turns of the pan, cook mushrooms 2-3 minutes
- Drop noodles or pasta into pot, cook about 3 minutes
- Add sesame oil to mushrooms with peppers, carrots, cabbage, sprouts and scallion whites, toss 2-3 minutes
- Drain pasta, add to vegetables, and add sauce and cooked protein
- Toss to combine and serve topped with scallion tops and sesame seeds

- Transfer chicken to a serving platter and tent with foil to keep warm. Pluck the rosemary sprigs from the pot. If the sauce looks thin, turn the heat to medium-high and let simmer until it thickens slightly, 2 to 5 minutes. Stir in the remaining grated garlic, the crème fraîche, chives and lemon zest. Taste sauce and add more salt if needed. Spoon sauce over the chicken and top with parsley, more lemon zest and a dollop of crème fraîche, if you like, and serve.
