Decadent and delicious, this recipe comes from a Herberger's cookbook. My favorite homemade cheesecake.

1 3/4 cups vanilla wafer crumbs
2 tablespoons sugar
1/3 cup margarine, softened (I use butter)
3 (8 ounce) packages cream cheese, softened
1 cup sugar
3 eggs
1 cup sour cream
1 1/2 teaspoons vanilla
5 (1 1/4 ounce) Heath candy bars, crushed

Steps:

  • Preheat oven to 350 degrees F. Combine crust ingredients; press into bottom and 1 1/2 inches up the sides of 9" springform pan. Refrigerate.
  • In large bowl, beat cream cheese with sugar at medium speed until fluffy.
  • Add eggs, 1 at a time, beating well after each addition.
  • Beat in sour cream and vanilla; blend until smooth.
  • Spoon half of filling over prepared crust. Sprinkle half of Heath bars over filling; cover with remaining filling.
  • Bake one hour our until cheesecake is just firm when pan is tapped gently. Cool completely in pan on wire rack. Sprinkle remaining Heath bars over top.
  • Refrigerate until chilled.

1 cup reduced-fat graham cracker crumbs (about 5 whole crackers)
1/4 cup packed brown sugar
1 teaspoon ground cinnamon
2 tablespoons butter, melted
FILLING:
2 cups 2% cottage cheese
1 cup reduced-fat plain yogurt
4 ounces reduced-fat cream cheese
3/4 cup sugar
1/2 cup egg substitute
3 tablespoons cake flour
2 tablespoons lemon juice
1/2 teaspoon grated lemon zest
1 teaspoon vanilla extract

Steps:

  • In a small bowl, combine the graham cracker crumbs, brown sugar and cinnamon; stir in butter. Press onto the bottom and 1 in. up the sides of a 9-in. springform pan coated with cooking spray. Place on a baking sheet. Bake at 325° for 10 minutes. Cool on a wire rack., In a blender or food processor, combine cottage cheese and yogurt. Cover and process until smooth; set aside. In a large bowl, beat cream cheese and sugar until smooth. Add egg substitute; beat on low speed just until blended. Stir in the flour, lemon juice, lemon zest and vanilla. Fold in cottage cheese mixture. Pour into crust. , Return pan to baking sheet. Bake at 325° for 40-45 minutes or until center is almost set. Cool on a wire rack for 10 minutes. Carefully run a knife around edge of pan to loosen; cool 1 hour longer. Refrigerate overnight. Remove sides of pan. Refrigerate leftovers.

Edge will be set, but center will still jiggle. Turn oven off; let cheesecake remain in oven 1 hour. Transfer to wire rack. Run thin knife around edge of cheesecake to prevent cracking during cooling. Cool in pan, about 2 hours. Cover and refrigerate 4 hours or overnight. Remove side of pan to serve.
