Prep Time 15 minutes

Cook Time 45 minutes

Yield 12 serving(s)

Number Of Ingredients 13

3 (32 ounce) low sodium chicken broth
3 pieces bacon, chopped
1 large onion white, diced fine
6 large russet potatoes, peeled and diced
1 lb sweet Italian turkey sausage
3 garlic cloves, minced
2 tablespoons olive oil
1 bunch spinach or 1 bunch kale, cut into bite size pieces
1 cup half-and-half cream, fat-free
1/4 teaspoon ground aniseed
1/2-1 teaspoon salt, depending on taste
1 dash red pepper flakes
black pepper

Steps:

  • In a large stock pot, cook the bacon until somewhat done.
  • Add the onion and saute until almost caramelized (golden color).
  • Add chicken stock and water, then bring to a light boil and add potatoes.
  • Cook Italian sausage (with casings removed) separately in a skillet.
  • When nearly done add garlic to the pan and cook until sausage is done and the consistency of ground beef.
  • Add mixture to the stock.
  • When the potatoes have softened, gently press some of them to the side of the pan to thicken the soup; leaving some whole.
  • Add fat free half and half, spinach, salt, aniseed, and peppers.

Total Time 45 minutes

Number Of Ingredients 12

2 slices bacon
6 ounces sweet or hot Italian sausage, casings removed (about 2 links)
1 small onion, chopped
2 cloves garlic, minced
4 cups low-sodium chicken broth
3 medium red potatoes, scrubbed and cut into 1/2-inch pieces (3 cups)
4 cups chopped trimmed kale
1 (15 ounce) can no-salt-added cannellini beans, rinsed
½ cup heavy cream
1 tablespoon lemon juice
½ teaspoon salt
¼ teaspoon ground pepper

Steps:

  • Cook bacon in a large pot over medium heat until crispy, about 2 minutes. Remove to a plate with a slotted spoon; set aside. Add sausage to the pot and cook, breaking up any large chunks with a wooden spoon, until no longer pink, 2 to 3 minutes. Add onion and garlic and cook, stirring, until fragrant, 1 to 2 minutes. Add broth and potatoes, scraping up browned bits at the bottom of the pan. Bring to a boil. Cover and reduce heat to a gentle simmer. Cook until the potatoes are very tender, about 20 minutes. Stir in kale and beans. Cook, uncovered, stirring occasionally, until the kale is tender, about 5 minutes more. Stir in cream, lemon juice, salt and pepper. Crumble the bacon and sprinkle over each serving of soup.

ZUPPA TOSCANA (BETTER THAN OLIVE GARDEN!) RECIPE | MYRECIPES
You don't have to venture out to your favorite Italian restaurant to get this classic, decadently satisfying sausage and potato soup. This so-simple rendition is simmered to perfection in your own kitchen using the slow cooker. Heavy cream is the key to the rich, full-bodied broth--but if you wanted to lighten the soup up a bit, you can replace half of the heavy cream with half-and-half. If you're going for that signature Olive Garden flavor, the key is to use *spicy* Italian sausage. That said, if you're serving this to the kids, you may want to opt for a milder sausage. Serve this hearty soup with a light salad and, if you really feel like going all-out, some savory herbed breadsticks. Recipe from FB: from Carl Barbaro
