Peanut Butter Baked Oatmeal

2 Tbsps clarified butter, ghee, or unrefined coconut oil, melted
2 large eggs, room temperature
1/2 cup maple syrup or raw honey
1-1/2 cups milk of your choice
1/4 cup all-natural peanut butter
3 cups old fashioned rolled oats
2 tsps baking powder
2 tsps vanilla extract
1 tsp cinnamon
1/4 tsp sea salt
To serve:
fresh strawberries and banana slices

Steps:

  • Preheat your oven to 350 degrees f. and lightly grease an 8 x 10 - inch baking dish with coconut oil or ghee.
  • In a large mixing bowl, add the eggs together with the melted clarified butter or ghee, maple syrup, or honey, milk, and peanut butter.
  • Whisk well to combine. Add in the rolled oats, baking powder, vanilla extract, cinnamon, and sea salt. Stir with a spatula to fully incorporate.
  • Pour your mixture into the prepared baking dish and bake for 30 - 40 minutes. Keep an eye on it those last few minutes.
  • Once the oatmeal is finished baking and just set in the middle, let it cool for a few minutes.
  • Slice into 8 servings and top with your fresh strawberries & bananas.
  • Enjoy!
