Quick Beef Tagine | Recipes | WW USA - Weight Watchers image

This Moroccan dish usually takes hours of slow cooking, but we sped things up by using lean ground beef. This tagine has a wonderful balance of sweetness and heat and is chockfull of eggplant, onion, carrots, garlic, diced tomatoes, and chickpeas. It's spiced with ground cumin and cinnamon, while dried apricot brings in that touch of sweetness. Top it off with some fresh cilantro and lemon juice for a bright, citrusy, and colorful note. The best part is it all comes together in just one skillet and takes only 45 minutes to prepare. Couscous, brown rice, or basmati rice would all be terrific on the side.

1 small Uncooked eggplant(s) diced (6 oz; 2 ¼ c)
1 medium Uncooked onion(s) chopped
2 medium Uncooked carrot(s) diced
8 oz Uncooked 93% lean ground beef
2 large clove(s) Garlic clove(s) finely chopped
1.5 tsp Ground cumin
0.5 tsp Ground cinnamon
14.5 oz Canned diced tomatoes undrained
1 cup(s) Chickpeas rinsed and drained
0.5 cup(s) Fat-free reduced sodium chicken broth
8 halves Dried apricot halves sliced
1 tsp Table salt (or to taste)
0.333 cup(s) Cilantro chopped
0.5 medium Lemon(s) cut into 4 wedges

Steps:

  • Coat a large nonstick skillet with cooking spray; heat over medium-high heat. Add eggplant, onion and carrots; cook, stirring occasionally, until vegetables soften slightly and are light golden, 7 minutes.
  • Add beef to skillet; cook until browned, breaking up clumps with a wooden spoon, 2 minutes. Stir in garlic, cumin and cinnamon; cook until fragrant, stirring, 30 seconds.
  • Stir in tomatoes, chickpeas, broth, apricots and salt; bring to a boil over medium-high heat. Reduce heat to medium-low; simmer, stirring occasionally, for vegetables to become tender and for flavors to develop, 10 minutes. Remove from heat; stir in cilantro and serve with lemon wedges.
  • Serving size: 1 1/2 cups

1 lb extra lean ground beef (drained or rinsed!)
1/2 cup onion (chopped)
1/4 cup canned jalapeno slices, chopped
2 cups fresh tomatoes, chopped or 1 (15 ounce) can diced canned tomatoes
1 (15 ounce) can kernel corn (drained)
1 (15 ounce) can black beans (rinsed and drained)
1 (1 1/4 ounce) package taco seasoning mix
8 corn tortillas
3/4 cup nonfat sour cream
1/3 cup reduced-fat Mexican cheese blend, shredded
1/3 bunch fresh cilantro, chopped, to taste (or less (or more)

Steps:

  • Brown ground beef and chopped onions in large skillet; brown 10 to 12 minutes or until thoroughly cooked, stirring constantly. Drain well and rinse with warm water to remove all fat; return beef/onions to skillet.
  • Add corn, black beans, tomatoes, chilies/jalapenos and taco seasoning mix; mix well. Reduce heat; simmer 5 minutes.
  • Meanwhile spray 12x8-inch (2-quart) baking dish with nonstick cooking spray. Cut each tortilla in half; place 8 halves in bottom of sprayed baking dish, overlapping slightly.
  • Spoon half of beef mixture evenly over tortillas. Spoon sour cream over beef mixture; spread evenly. Top with remaining 8 tortilla halves and remaining beef mixture. (Cover tightly with foil & Freeze for later OR cook as directed below…).
  • (Thaw overnight if frozen) Heat oven to 350ºF. Bake at 350ºF for 25 minutes. Remove from oven; sprinkle with cheese. Cover; let stand 5 minutes or until cheese is melted. Sprinkle with chopped cilantro and serve with fresh chopped lettuce, tomatoes, salsa, black olives, etc… /.
